Banana Oat Truffles

Ingredients
  • 2 bananas
  • 2 cups instant oats
  • 1 tbsp peanut butter
  • ¼ cup tapioca flour
  • 1 tbsp raw sugar
  • ½ cup of pumpkin seeds or chocolate chips
Method
  1. Heat oven to 180°C/350°F.
  2. Process the banana and peanut butter until well mixed.
  3. Add all the dry ingredients and process again.
  4. Rub a little oil onto your hands and roll the mixture into small balls.
  5. Position on a lined oven tray.
  6. Place in the oven and bake for 8 minutes.
  7. Remove and eat warm or cool first. They are also great with some lactose-free Greek yoghurt.
