All week I think about my weekend baking - in a good way. I don't obsess, I just wonder what I will bake. So, as I visit my favourite food blogs, I keep an eye out for something that jumps off the page. It could be special ingredients like yesterday's White Bean Cookie Cake, or beautiful photos like for today's recipe which I found on the Butter Cream Blondie blog. It makes me wonder how I will photograph the dish and whether it will be appropriate for the family. These blueberry oatmeal cream cookies are not quite as healthy as the granola bars I have been making lately but they do have blueberries and lots of rolled oats so can't be all bad. White-Bean Cookie Cake – Gluten-Free and Delicious
My sister and I were supposed to be visiting our mother tomorrow so I made this gluten-free cake to take since she is now gluten-free and feeling the better for it but Janet (my sister) has an exceedingly nasty cold, which my Mum and I do not have any intention of catching. So, no visit and more cake for us. This is similar to some bars I made recently, which I found on the website of Chocolate-Covered Katie. They went down really well with the family so I went hunting for another gluten-free sweet on her website and found this cake/dessert, which uses the same unusual ingredient as the bars - white beans. You can find the recipe here. I prettied it up with a lemon icing drizzle on top, which I actually liked because the lemon cut through some of the sweetness of the dish. Granola Chocolate Cranberry Cookies – a Gluten-Free Recipe
As usual, on Sunday I bake the healthy morning tea for the week. I decided to combine some of my favourite granola bar ingredients and make them into cookies rather than bars. Pure semantics, I know, but a girl needs a change once in a while. Adriano and Dario have come to expect the baking containers to be full. Last week we ran out before the end of the week so this time I made quite a few cookies but several have already been eaten so maybe I should have tripled the recipe. These took all of ten minutes to throw together and they looked cooked after about ten minutes but, as I have said, my oven is whacky and they could take longer in yours. Lemon & Blueberry Polenta Cake – low Fodmap & gluten-free
I've made plenty of cupcakes and bars so it was time to make a cake. I don't trust my oven. Even after 5 years in this house, I have not figured out my expensive Smeg oven. It cooks unevenly and seems to burn the outside of everything before the inside is cooked. Anyway, I wouldn't let it beat me and I decided to make this gluten-free lemon, berry polenta cake, which I found at www.cakeboule.wordpress.com I saw it getting a bit too brown on top before the time was up so I covered it with tinfoil but it still got a little too dark on the bottom even though I pulled it out well before the instructions said. I have adjusted the timing accordingly in the recipe but check it after 35 minutes to see if a skewer comes out clean. If it does, get it out of there. This is a very moist, totally delicious cake with a brilliant sharpness from the 4 lemons, which cuts through the sweetness of the sugar syrup which gets poured over the cooked cake. Genius Chocolate Chip Blondies – surprising ingredient and gluten-free
I've gone off the granola bar track but only temporarily as I try this fascinating recipe for chocolate chip bars. I am always interested in unusual recipes which have strange ingredients like the chocolate cupcakes I made with cooked rice as the starch. These chocolate chip bars include an ingredient that I would never have thought of for a sweet product - white beans. The bars turned out well and they are moist but they do have a distinctive flavour and you have to be okay with that. What I loved was that it was the simplest recipe to make. Every ingredient except the chocolate chips went into the food processor and got blended to a smooth paste. I love the simplicity of that. I found this recipe at Chocolate-Covered Katie. Carrot Cake Cupcakes – can’t beat these classic favourites
My favourite cake of all time, even beyond chocolate and caramel, is carrot cake. I made and blogged about the carrot cake cookies I made a while back and today I returned to this great classic in the form of cupcakes. These don't just have carrot, they have grated apple and raisins as well. I remember many years ago when I was on Weight Watchers (after a particularly long renovation without a kitchen and many takeaway meals later) that they told me a piece of carrot cake equates to a full day's calories when on a weight-loss diet.. By the way, also a McDonald's Big Mac is a day's calories. Just in case you wanted to know. Anyway, I have never been able to look at carrot cake quite the same again. And I never touched any McDonald's food again, Big Mac or otherwise. But, carrot cake does have carrots and therefore can't be all bad, surely.
