Banana Cranberry Mousse – Low Fodmap & Gluten-Free
When my son was small, my mother used to make him banana ice cream with nothing but bananas by pushing frozen bananas through a meat mincer. It came out as a wonderful tasting ice cream that fooled everyone. No one could guess that it was nothing but bananas. Anyway, I wondered if I could replicate it without a mincer. Well, actually, the answer is no. So I have made a mousse instead. I wanted to give the bananas a little more flavour so added dried cranberries and chopped them into the frozen bananas with a blender. Then I gave the mixture a little texture as well as extra flavour by adding coconut and flaked almonds. By using the frozen bananas, the mixture is very cold which resembles a very soft ice cream. This is a simple, tasty dessert that you could easily make anytime as long as you have some bananas in the freezer, and you could vary the flavours according to what you have in the larder. Banana Mousse Cake – grain, nut, dairy and refined sugar-free
The banana coconut loaf I made on Saturday is almost finished - it was that popular. So I have had to bake again to make sure we have enough for the week. Today, Monday, is a holiday here in Auckland, New Zealand and for me the perfect activities when I have some spare time are baking and photographing. I have made the same base vanilla cake you can find here, which comes from Carol Lovett's e-book Indulge and then I devised a wonderful banana mousse for the topping and used a few leftovers for the filling between the layers. The banana mousse is made from only 4 ingredients and can be used by itself as a dessert. For the filling, I whizzed together in my trusty mini food processor the lemon curd left over from my lemon meringue tarts, and the leftover coconut topping and strawberry puree from the banana coconut loaf and it made an interesting tart pink mixture which contrasts beautifully with the sweetness of the bananas.
