You would think by now I had run out of new granola bar recipes and it could definitely happen. There are only so many dried nuts and fruit out there and the binders must be limited too but so far I have never repeated one. Adriano and Dario now expect to have the tins (Tupperware container, actually) full so they can stick their hungry hands in there whenever they want and find something to appease their appetites. Last week I made those granola bars filled with caramel and topped with chocolate. That was a mistake – they were all gobbled up by Wednesday because they were too delicious. Caramel, Chocolate Granola Cups
I have had a busy weekend with four photo shoots today alone. My feet are sore from being on them all day and from our visit to the Food and Wine show yesterday. That was a great experience with food samples and tiny glasses of wine flowing in all directions. From a wide variety of cheeses to thick, rich yoghurts, spicy sausages, crackers and chutneys of all kind. The tummy expanded and the eyes swam as we moved deeper and deeper into the show. We maneuvered through the first pavilion with methodical precision born of a clear head but by halfway through the second, we could have been in the back streets of Italy for all we knew. We had no idea where we were. The limoncello was irresistible, the feijoa wine needed to be tasted in all its varieties from the sparkling to the special reserve, the cold beer called from afar. Salted Caramel Apple Cupcakes – weekend baking
Even though I made a banana loaf on Friday night, I still decided to do the Saturday baking as planned. I already had picked out a recipe for scrumptious looking cupcakes from here and went ahead and made them. Her recipe for the caramel sauce didn't work well and turned out yellow so I think you could use the one I made last week for the caramel chocolate bars. When I made the batter according to the instructions, it ended up a curdled mess and I thought I was in trouble but the cupcake turned out light and delicious. The icing is so rich you can only eat one a day or your cellulite will get the upper hand so I took some to my Mum's for Mother's Day and will take some to work tomorrow if there are any left after Dario gets into them tonight. This weekend baking gig seems to be becoming a regular indulgence. I found this recipe on That Skinny Chick can Bake and couldn't resist it. I obsessed about it all week and found myself in the supermarket on Saturday with a shopping list in hand. The result was super sweet and my cravings were fulfilled.
