Baking has become the new pastime during lockdown as can be evidenced by the lack of flour on the supermarket shelves. That includes me. I have made Anzac biscuits, ginger crunch and several batches of peanut butter, chocolate chip cookies because they are so delicious and satisfying. Use dark chocolate and a plain peanut butter with no additives including salt and sugar. Make small cookies or eat only half if they are larger. Today, the New Zealand government announces whether we are lowering to level 2 lockdown (of 4 levels) so that the country can almost completely open up again, but still with the borders shut. NZ has had between zero and two daily cases of the virus for the last week, and all the cases can be traced to a known contact. In other words, we have no community transmission. Things are finally looking up - in this part of the world at least. White Raspberry Chocolate Cookies
I have made these cookies before here but this time I changed the dried fruit and chocolate ingredients. I consider it one of my best granola bar/cookie recipes to date and so, when I was sent a bar of Whittakers' white raspberry chocolate, I decided to make them again and incorporate some of the bar. I say “some of the bar” because by the time I got around to do the baking, Adriano and Dario had almost demolished the bar. They swear I hadn’t said to keep their hands off it, but I know better. Whittakers sent me the chocolate as part of a promotion to advertise that 20% of the profits of this newly developed flavour go to Breast Cancer research. I agreed because I wanted to eat the chocolate and it was certainly no hardship to include it in a recipe. The 20% to breast cancer is a fortunate by-product since this is truly a cruel killer of women. Get your checks ladies and stay out of the statistics. As for the recipe, I doubled it to make sure we wouldn’t run out of them during … [Read more...] about White Raspberry Chocolate Cookies
From Ugly to Pretty – Orange, Chocolate & Coconut Cookies
I found this recipe at one of the blogs I visit regularly, Anja's Food 4 Thought. I made a few minor changes and increased the quantities since we needed enough to last a week. When the cookies came out of the oven (see below) they were super ugly and I had to think long and hard about how to make them photogenic. I had all that berry cream cheese frosting left over from the beetroot cake I made so I stiffened it up with more icing sugar and piped it on top. With this intervention they were starting to look prettier. I then melted a little dark chocolate and drizzled a little over each one. Now we had something worth photographing. I pulled out over-the-top props like the wreath of red roses and the bunch of berries I bought in Italy for a euro and photographed the result. By the way, the cookies taste great and Anja's cookies looked a whole lot better than mine in the raw state. This is not a low Fodmap recipe. Chocolate Chip, Raisin Cookies – Morning Tea Baking
I have done the morning tea baking on a Saturday this week. I found the recipe with a few changes at Chocolate Covered Katie's blog. (This is not a low Fodmap recipe.) I added raisins because I love them and I also doubled the recipe because the quantities of the ingredients looked a bit small. In fact, I should have quadrupled it because I ended up with only 12 cookies and that won't last us the week. Katie made them smaller and sandwiched them together with a slice of banana in between. If you have counted the cookies in the photo, yes, there are only eleven. Guess where the twelfth is. They taste good, by the way, but don't overcook them. I also baked a carrot cake this afternoon and it tasted superb, as do most carrot cakes. Unfortunately I can't show you it because it is a recipe I produced for a french company I supply recipes and photographs to. Fortunately I made two smaller cakes because I messed up on my first attempt to ice it. It was a layer cake so I sliced it in half … [Read more...] about Chocolate Chip, Raisin Cookies – Morning Tea Baking
Ginger, Coconut, Raisin & Oatmeal Cookies – Gluten Free
I have finally made the best gluten-free cookies in the world. I can't believe they didn't burn in our notorious oven and I can't believe how moist they are inside and so super tasty with the extra heat of the ginger. These are the accumulation of all the knowledge I have built up over the last months making different granola bars each week. I have taken the ingredients which have performed the best and put them all together and hey presto, super cookies. While I am here I just want to pass something by you all. On Pinterest there are millions of pins of uplifting sayings to make you feel good. You know the ones about following your dreams, live life to the fullest etc. But here's the thing. Sometimes we read those sayings and they make us feel vaguely uncomfortable. Have you ever analyzed that? Well here's what I think and I said this recently in a comment on a blog somewhere. I think we put way too much pressure on ourselves to live life to the fullest - it makes us always feel … [Read more...] about Ginger, Coconut, Raisin & Oatmeal Cookies – Gluten Free
Almond, Coconut & Chocolate Chip Cookies – gluten-free
We've had a lot of granola bars lately and even though each set has been different, I thought I would do cookies this week for our morning teas. And not just any cookies - these are gluten-free and delicious with the flavours of almond, coconut and of course a little indispensable chocolate. I found the recipe at the A sweet Spoonful blog, which is well worth checking out. As a food blogger, I see kitchen stores in a completely different way to the normal cook. I look for small everything. Cute wee jugs which hold a tablespoon of sauce, tiny pots for a mouthful of mousse, a miniature spoon. You would think we live in a dollhouse but I need props which fit in the photo frame and adult sized objects often mean that the tops get cut off. And anyway, wee is just plain cuter. I am always dropping into our local thrift charity shop where I buy amazing objects for a couple of dollars. The other place I have found some wonderful props is Trademe, New Zealand's equivalent of Ebay. The … [Read more...] about Almond, Coconut & Chocolate Chip Cookies – gluten-free
