I had already decided on this Jamie's 30-Minute Meals recipe and given Adriano the shopping list when I went online to see if there was a video of Jamie making this meal and found quite a turn up for the books. Jamie has been slammed for this recipe for the high fat levels in it. Double a Big Mac, if that's possible. I'm not sure where it all is but it does have mince meat, cheese and bacon. The rest is all vegetables. So I cut out the cheese and reduced the bacon. The coleslaw with the purple cabbage was really good but I felt the sandwich was a bit dry though Adriano liked it just the way it was. I would still make a tomato sauce and add it for the moisture. This is the first Jamie meal that I didn't completely enjoy. He also included a salad with salad leaves, tomatoes, avocados, basil and feta cheese - this was really good but then again I love most salads. I have put the original recipe below. Jamie says it serves 4 but we had only one ciabatta loaf and it was plenty. This is … [Read more...] about Jamie Oliver 30-minute Meatball Sandwich and Pickled Cabbage

Jamie’s 30 Minute Beef Hash & Jacket Potatoes
Here we go again - the Jamie's 30-Minute Meals challenge. And this time I didn't leave anything out because there was no dessert, so I was pretty nervous we would be eating at midnight. There were four different dishes so it seemed a little overwhelming but I rolled up my sleeves, turned on the oven, got out all the ingredients and the food processor and started work. About 40 minutes later, I lifted my head and surprisingly it was all done. Not bad at all and a lot of food had been prepared. The family tucked in and were impressed. This is good homely style food which is perfect for the cold winter we are having. This is not a low Fodmap recipe. 4.3 from 3 reviews Jamie’s 30 Minute Beef Hash & Jacket Potatoes Print Author: Suzanne Perazzini Ingredients 4 baking potatoes Few sprigs of rosemary Sour cream (for the potatoes) 500g beef mince 2 sprigs of thyme 1 red onion 3 sticks of celery 2 carrots 4 cloves of garlic, minced 6 tablespoons … [Read more...] about Jamie’s 30 Minute Beef Hash & Jacket Potatoes
Beef, Feta and Roasted Pepper Open Sandwiches
I love the kinds of foods you get at cocktail parties - finger foods. Those little bite-sized pieces you can pop in your mouth without getting all messed up. Well I've taken a classic one and enlarged it to dinner sized. Toast a crusty piece of bread, top it with feta, roasted peppers and thin slices of sirloin steak. Add a little horseradish and pesto sauce and a man-sized finger food has been created. Beef, Feta and Roasted Pepper Open Sandwiches Print Author: Suzanne Perazzini Ingredients A thick slab of sirloin steak Feta cheese 2 red peppers Parsley Garlic infused oil Olive oil Pepper & salt Gluten-free bread - sliced Horseradish sauce Pesto (optional) Method Grill the steak until medium rare and let rest for 5 minutes. Cut into slices. Char the peppers under the grill until the skin is black. Remove the skins. Slice up the peppers and mix with one tablespoon of garlic-infused oil, one tablespoon of olive oil and chopped up parsley. Season the mixture. Beef, Spinach and Feta Pie
The dinner last night was not so photogenic so I decided to make a pie. They usually look pretty good if it doesn't all go horribly wrong. Thank goodness this one didn't. I got the recipe from Spicie Foodie but I used puff pastry instead of philo pastry because I always find it too dry and brittle. Maybe I should buy better quality. Adriano and Dario devoured every last crumb of the pie and it wasn't that small. The layers of meat, spinach and feta worked really well to create a tasty and filling meal. This recipe is not low Fodmap. Beef, Spinach and Feta Pie Print Author: Suzanne Perazzini Ingredients 3 sheets of puff pastry 500 g mincemeat 1 small onion, finely chopped 4 garlic cloves, minced 2 small chillies, finely chopped 1 tsp dried thyme ½ tsp dried rosemary 1 tsp salt ¼ tsp ground black pepper 1 pack (350 g) frozen spinach Feta cheese Olive oil or vegetable oil 1 egg lightly beaten, for egg wash Method Preheat oven to 220 c degrees. … [Read more...] about Beef, Spinach and Feta Pie
Thai Beef Salad
Cooking Recipe: We all have a version of a Thai beef salad and I made one of mine tonight. It is so simple. Here are a few of the ingredients - I do like to assemble things before I start. The first thing is to put a couple of sirloin steaks on the grill and cook until still pink inside but not bloody or it will taint the salad. While they are cooking, chop up chives, red chillies and coriander. Then throw a mixture of salad leaves in a bowl and add chopped up tomatoes. Next step is to mix the dressing: 1 tbsp soy sauce 1 tbsp fish sauce 2 tbsp lemon or lime juice 1 tbsp sugar 1 tsp garlic-infused oil Once the meat is cooked, slice it up into bite-sized pieces and throw into the dressing and mix. Now everything gets chucked in together and mixed to coat all the leaves with the dressing. Eat it with a bread of your choice - it's yummy scrummy. … [Read more...] about Thai Beef Salad
