This meal has once again thrown me back to a trip I took with Adriano – our very first holiday together. We went to London, which was horrendously expensive in the middle of summer and we rapidly ran out of money so after sleeping in some uncomfortable dives, we realised we had just enough for one more night and decided to spend it in Paris. We caught the ferry and train across to the city of love to stay in another rather suspect lodging. The next day, the train was leaving for Torino, where we lived, in the early afternoon so we tootled off to a Moroccan restaurant to eat a meal of couscous and drank the last of our money in wine. Snapper & Cauliflower Couscous – A Gluten-Free Dinner
One of the first food blogs that I discovered was Roost, a gluten-free blog run by a young woman who cooks for her gluten-intolerant husband. It is a lovely, gentle journey of their lives together and I visit often. Yesterday I found this recipe there and it surprised me no end that you could make gluten-free couscous. Well, it's not exactly couscous but it sure fooled Adriano. Even though he had done the shopping for the meal, he couldn't work out what he was eating. This dish together with the snapper and my own recipe for mayonnaise was a perfect combination of flavours. Jamie Oliver would be proud to have produced this meal. Moroccan Lamb Chops, Herby Couscous & Stuffed Peppers
I did it! I made this one of Jamie's 30-Minute Meals in 30 minutes. I cut out the drink but that should have taken all of 5 minutes so I believe I can pat myself on my back. Or Jamie can for having created at least one 30-minute meal. I do suspect that the wine I had at work might have loosened up my cooking muscles and made me relax because there were a lot of elements to this meal but none of them were complex. And once again it was delicious. The two sauces were a perfect accompaniment to the couscous and lamb. Jamie Oliver is a genius at flavours and I can recommend this as a meal which will be well received by all the family. Vegetable Couscous with Pesto
As I have probably said before, couscous is Adriano's favourite grain and I make several different recipes with it. This one came from Lebanese Recipes Kitchen and it proved to be the best yet. I would never have thought of putting pesto with a Lebanese-style couscous but it worked well. This is not a low Fodmap recipe. Spicy Eggplant Couscous – Vegetarian
You might have noticed that we eat quite a bit of couscous. It's a great alternative grain to the usual potatoes and rice, it takes all of about five minutes to cook and it's delicious. When I was in my early twenties, I decided to become vegetarian but it was really difficult to make sure that I was getting enough of the right kinds of proteins in the right combinations and when I went to live in Italy, I au paired for a year before getting a teaching job and the family I lived with were not vegetarian and I would have starved if I had not changed back to eating meat. However, I still believe we here in New Zealand eat too much animal protein and a sprinkling of vegetarian meals is a good thing. Tonight's dinner was one of those times. Couscous with Sausages and Peppers
Another simple recipe for those work nights when you get home at 6.30pm then need to exercise before cooking. This recipe is not low Fodmap. Couscous with Sausages and Peppers Heat together: 1/4 cup of vinegar 1 + 3/4 cup of water 1 tsp of honey 1 tbsp of mustard Turn off heat once it reaches the boil and add two cups of couscous. Put the lid on and let it soak for 3 minutes. Meanwhile chop up three red, yellow or green peppers into small squares. Cut 200g feta into squares. Cook six of your favourite sausages and slice them up. Fluff up the couscous with a fork and mix all ingredients together.
