This is the salad I made for Christmas Day and I'm only just getting around to posting it but it is worthy of a place here. I usually make the turkey but this year I was let off lightly and I only had to do an interesting salad. So I thought about it for some time and dismissed many early entrants into the race and eventually came up with a hybrid of two ideas. I found the main part at the Betacyanin blog, played with the dressing and added the breaded cheese. It turned out to be a real winner but I do have to tell you that it is labour intensive with many parts. The good thing is it is a complete meal and tastes delicious. This is NOT a low Fodmap recipe. Salmon & Feta Pizza with Cauliflower Base – gluten-free and why I am taking this path
I am trying grain-free at the moment - paleo diet style. You might ask why I am doing first sugar-free and now grain-free. Well, I am trying various different options in an attempt to eliminate certain issues I have been having for years. Probably since I was born actually. When you know no different, it takes a while to click that perhaps this is not the way it should be. I won't go into unnecessary details but I will tell you that it got a lot worse six years when my father died and I took on a very stressful job. Until then, I had coped but now it was painful and limiting. I tried seeing doctors but that can be a useless path to take if you don't have a broken bone which is easy to diagnose so I eventually gave up on that. Haloumi, Pea & Mint Fritters
We had these for dinner but made smaller they would work perfectly as finger food with a glass of wine. The flavours work well together. Today, I was checking my statistics to see who was viewing my blog and I saw several hits coming through from Youtube but I don't have any videos on there so I had to investigate and followed the links back and found a young girl talking about her November favourite things and she mentioned my Jamie Oliver recipe of cauliflower macaroni cheese as one of her favourite recipes. Some of her tens of thousands of followers have been visiting me. If you do follow the link to see her video, beware that it really is for young teenagers. Green Curry, Crispy Chicken, Kimchee Slaw & Rice Noodles – Jamie’s 30-minute meal
This one of Jamie's 30-Minute Meals took 45 minutes but I made all of it. I don't know if I have done that before. I usually cut something out. Both my main food processor and my mini one came in handy. They do cut down on the work. Jamie used an unusual method for cooking the chicken. He fries it in a big pan for a bit and then put greaseproof paper on top and then a smaller frying pan. On top of that he put a mortar and pestle for weight. I guess the idea is that it presses the chicken into the pan to cook it evenly. It did come out pretty crispy. This meal was super delicious with heaps of flavours and we ate every bit. I loved the idea of piling everything onto our plates and then pouring the liquid curry juice all over the meal. Yum. Oozy Mushroom Risotto – a Jamie Oliver 30-Minute Meal
Another one of Jamie's 30-Minute Meals - a fairly simple one because I have been making risottos for years without blinking. He adds a lot more herbs than the usual Italian risotto but otherwise it's pretty accurate. I also made the accompanying spinach salad which I didn't photograph because it wasn't particularly photogenic. It was spinach, pine nuts, mint and sundried tomatoes - a good foil to the risotto. This meal also included a quick cheesecake in a glass but, as usual, I didn't make the dessert. The risotto and salad took about 40 minutes altogether. I was able to prepare the salad while adding water to the rice so it was time efficient. This recipe is not low Fodmap. Spicy Potato & Pea Patties – vegetarian meal
If you are in need of a little spice in your life, cook these patties for dinner tomorrow night. As soon as I saw them on the Flavors of Mumbai blog, I knew I had to cook them. They are a nice surprise for the family if they don't see you preparing them because when they cut into what seems like a potato patties, they will find this delicious spicy pea mixture inside.
