I have been seeing these thumbprint cookies all over the web but no gluten-free ones so here is my gluten-free, low FODMAP version. I took inspiration from those I found on Julia's Album so if you want a mainstream recipe for them, go take a look here. If you are on a low FODMAP diet, be careful about what jam you use. Make sure it is sugar-free and has no apple in it. Many commercial jams have a base of apple so, as always, make sure you check that dastardly ingredient list. I am about to start my second week of freedom from work and I am in heaven. I am still spending too much time at a computer but my headaches have reduced though not disappeared. I guess it takes a bit to retrain the body. I am walking down to the beach each day to watch the frolicking in the water and am getting my courage up to join them one of these days. Coconut Banana Cookies – gluten free & low FODMAP
Those lovely little tarts I made at the weekend disappeared fast and we ran out of baking last night so there was a quick flurry of activity and these cookies were the result. I couldn't do any elaborate slices or tarts because of time constraints after work and before dinner but sometimes the simplest, quickest recipes can be just as satisfying as the more time-consuming ones. These use coconut flour, shredded coconut and bananas to make a soft tasty cookie. They have only two tablespoonfuls of sugar so are suitably low FODMAP. This is a recipe , using date puree instead of sugar, which I used in my cookbook stacked together with chocolate avocado mousse to make whoopie pies. Our avocados here in New Zealand are rock hard right now so the chocolate mousse had to be shelved. Anyway, the baking container is now full and I can relax for a few days until the cookie munchers come raiding again. White Raspberry Chocolate Cookies
I have made these cookies before here but this time I changed the dried fruit and chocolate ingredients. I consider it one of my best granola bar/cookie recipes to date and so, when I was sent a bar of Whittakers' white raspberry chocolate, I decided to make them again and incorporate some of the bar. I say “some of the bar” because by the time I got around to do the baking, Adriano and Dario had almost demolished the bar. They swear I hadn’t said to keep their hands off it, but I know better. Whittakers sent me the chocolate as part of a promotion to advertise that 20% of the profits of this newly developed flavour go to Breast Cancer research. I agreed because I wanted to eat the chocolate and it was certainly no hardship to include it in a recipe. Ginger, Coconut, Raisin & Oatmeal Cookies – Gluten Free
I have finally made the best gluten-free cookies in the world. I can't believe they didn't burn in our notorious oven and I can't believe how moist they are inside and so super tasty with the extra heat of the ginger. These are the accumulation of all the knowledge I have built up over the last months making different granola bars each week. I have taken the ingredients which have performed the best and put them all together and hey presto, super cookies. While I am here I just want to pass something by you all. On Pinterest there are millions of pins of uplifting sayings to make you feel good. You know the ones about following your dreams, live life to the fullest etc. But here's the thing. Almond, Coconut & Chocolate Chip Cookies – gluten-free
We've had a lot of granola bars lately and even though each set has been different, I thought I would do cookies this week for our morning teas. And not just any cookies - these are gluten-free and delicious with the flavours of almond, coconut and of course a little indispensable chocolate. I found the recipe at the A sweet Spoonful blog, which is well worth checking out. As a food blogger, I see kitchen stores in a completely different way to the normal cook. I look for small everything. Cute wee jugs which hold a tablespoon of sauce, tiny pots for a mouthful of mousse, a miniature spoon. You would think we live in a dollhouse but I need props which fit in the photo frame and adult sized objects often mean that the tops get cut off. And anyway, wee is just plain cuter. I am always dropping into our local thrift charity shop where I buy amazing objects for a couple of dollars.
