You all loved the last low Fodmap pizza I made HERE and it was shared heaps on Facebook so here is another version - same pizza crust, different toppings. Everyone loves pesto, and it goes perfectly with pizza so it makes a great topping instead of tomato. Then you can pile on anything you like. Eggplant instead of zucchini works well too. We are permitted 1/2 a cup of both so don't overindulge. Having lived in Italy for nine years, I have a fondness for prosciutto but it is quite expensive here. Buffalo mozzarella would have worked well too but a reasonably small ball costs about $10 in New Zealand so I only buy them for special occasions. Pizza is a good fallback meal when you don't know what to make or can't be bothered going shopping. The pizza crust is so easy to make, and I always have the ingredients, and anything can go on top. Bacon and Tomato Pizza – gluten-free & Low FODMAP
I know this pizza looks good and the toppings are great but the base once again did not live up to the hype on the blog where I found it. I imagine the recipe worked for that blogger but there are too many variables for it to work for another cook. I will take the blame because I did replace millet flour with buckwheat flour. I don't really know millet flour because I have never used it so maybe buckwheat flour was not a good substitute. Anyway, despite using yeast, the dough was stodgy and tasted bad. I still love this gluten-free pizza base I made a little while ago so I should just stop trying different ones. So, sorry but there is no recipe today. However, I had taken the photos before I realised how bad it was so I thought I would post about it anyway to show you that we all fail in our quest for great food. Salmon Pizza – grain and nut-free
I was determined to make a pizza base which had the crispiness of the thin Italian bases I used to eat in Italy. They are the only bases I like. None of the fat, fluffy ones for me. I thought this tapioca recipe should work because it holds together brilliantly so I gave it a shot last week. This dough is similar to the bread rolls I made for the burgers we ate recently but with a few differences. Tapioca clumps up when heated with liquid and becomes like a gel. It is this gel which holds everything together to form a dough. I made it, rolled it out very proudly, covered it with my chosen toppings and popped it into a hot oven and waited. And waited and waited. In the end we had to eat – I am talking about after 8.30pm – so I took it out and served it. The edges were beautifully crisp but they rest was a doughy, uncooked mess. Eggplant Pizza – a grain-free meal
Here's a simple dinner which will please all the family from those eating grain to those who aren't. I kind of missed pizza but now I don't any more. You see it wasn't the base I missed; I missed all those yummy toppings and I can certainly still have those. Obviously the toppings can vary according to what you have in the fridge or what you fancy when doing the shopping. This is a complete meal but could be served with a green salad and bread for those who want some grains. I got the idea for this pizza from one of my favourite blogs, Drip and Drizzle. Salmon & Feta Pizza with Cauliflower Base – gluten-free and why I am taking this path
I am trying grain-free at the moment - paleo diet style. You might ask why I am doing first sugar-free and now grain-free. Well, I am trying various different options in an attempt to eliminate certain issues I have been having for years. Probably since I was born actually. When you know no different, it takes a while to click that perhaps this is not the way it should be. I won't go into unnecessary details but I will tell you that it got a lot worse six years when my father died and I took on a very stressful job. Until then, I had coped but now it was painful and limiting. I tried seeing doctors but that can be a useless path to take if you don't have a broken bone which is easy to diagnose so I eventually gave up on that. I then tried to analyse the situation and narrow down the triggers, but it was too complex and I was too busy to spend the time needed to do the job properly. So on it went with no relief.
