My days all blur one into the other now that I work from home. I forget when it is Saturday, which was always my baking day. But I have decided to stick to that routine at least, so I made yummy mini loaves for a guest post and this Blueberry & Almond tart for Adriano and me. Dario is away motorbiking around New Zealand with a good friend, which sometimes stops my breathing when I think of him out there on those roads with so little protection. But, he is having a great time and I was doing the same thing in Europe at his age, so I can't say much. Back to my baking efforts. I am trying to get this gluten-free recipe right for pastry and this was a little better but still a bit tough. Life is humming along quite nicely here in New Zealand with lovely weather and a carefree atmosphere. Even though I seem to be working more than usual but at home, I am also feeling light as a bird - a bird who has got rid of the heavy load of a soul-destroying job. Read an update here. The other day I made an old favourite of mine from when I was in my twenties. It's in a folder of recipes that all look ancient and yellowing with age. But some are just as good despite the passing of time. This is so simple, and great if you have people over for lunch. If you have little warning, you could even use a ready made pastry crust and shop-bought mayonnaise - not that I advocate those shortcuts at all. But sometimes needs must. Dinner Party Menu – gluten-free and low FODMAP
I have been having quite a few dinner parties lately and that has got me to thinking about putting some dinner menus together for those of you who have to watch what you eat. When you invite people to your own home for a meal, it may seem a little odd to cook from the restricted range of foods on your own eating regime. But why not? You don't want to sabotage yourself and who would even know any different, as long as you are a little smart with your choices. Many of your friends will already know about your food intolerances but I don't think it is necessary to make the dinner party in any way about that. Cook delicious food and no one will be any the wiser. You can even serve bread - I would recommend this gluten-free low FODMAP one which was a great success. Strawberry Sour Cream Tart – gluten-free and low FODMAP
Last night I had another dinner party for good friends. There were eight of us around the table and it was delightful to be with like-minded people where conversation is no effort. I completely forgot to take photos of us all together but, fortunately, I did photograph the dessert before they arrived or that too would have been lost. This is the same recipe as my Blueberry Sour Cream Tart but with strawberries since they are in season here. This is not a very sweet tart because I keep the sugar low but you could increase the amount. This time the tart cooked quicker than last time and only took about half an hour so do keep an eye on it. The filling sets quite quickly so, as long as you have pre-cooked the pastry, it might take even less than half an hour. Blueberry Sour Cream Tart – Gluten-Free & low FODMAP
I had the most wonderful gift yesterday. My boss gave me the day off work. I couldn't think of a better gift than the gift of time. My weekends seem to be brim full of all the things I can't do during my working week and the extra day was bliss. I did nothing much that was on my permanent to-do list. Instead I went to the movies - Woody Allen's Blue Jasmine, which was amazing and had an ice-cream, a rare occurrence. I then walked to the beach, did a big circuit past the shops and on to the supermarket to buy a few ingredients to make this delicious tart. Once home, I baked it in a leisurely manner, unlike the rush that often happens on Saturday, and thoroughly enjoyed the experience. And I can tell you something - it tasted wonderful for it. Smoked Salmon and Caper Tart – grain-free
Tarts always take longer to make than you think they will. First there's the pastry to prepare and bake and then the filling to prepare and bake. It adds up to ages. And so my family ate late amidst moans and groans about starvation. But the wait was worth it. The pastry is the one I have used for my sweet tarts but I left out the honey. As a shell, it holds together beautifully, even better than ones made with wheat flour and butter. Then I used a delicious filling which I found in a magazine with a few changes. It has a ton of vegetables and salmon for the daily hit of Omega-3. A complete meal in a tart.
