You all loved the last low Fodmap pizza I made HERE and it was shared heaps on Facebook so here is another version - same pizza crust, different toppings. Everyone loves pesto, and it goes perfectly with pizza so it makes a great topping instead of tomato. Then you can pile on anything you like. Eggplant instead of zucchini works well too. We are permitted 1/2 a cup of both so don't overindulge. Having lived in Italy for nine years, I have a fondness for prosciutto but it is quite expensive here. Buffalo mozzarella would have worked well too but a reasonably small ball costs about $10 in New Zealand so I only buy them for special occasions. Pizza is a good fallback meal when you don't know what to make or can't be bothered going shopping. The pizza crust is so easy to make, and I always have the ingredients, and anything can go on top. Guest blogging at Cravings of a Lunatic
Today I am guest blogging at the Cravings of a Lunatic blog. Kim is a barefoot cook who hates eggs, tomatoes and mac n cheese and if different foods touch on her plate, she throws a hissy fit. Did you notice the name of her blog? All this plus plenty more makes her one very entertaining woman and she sure can cook. Tomato & Pesto Tart – leftover night
I had a completely different dinner planned but then saw a tomato tart on Spicie Foodie and was inspired to make one too. I didn't have any roasted tomatoes like hers but I had tomatoes, salami, cheese and the ingredients to make a parsley pesto as well as some frozen puff pastry so I went home from work and created a yummy tart from what I had in the fridge. In the weekend I bought a mini processor and it made the pesto in a second. How did I live without it until now? The tart tasted really good. This is not a low Fodmap recipe. Salami Pasta Salad
Cooking Recipe: I saw this recipe in my favourite salad book and stopped turning the pages. It was too beautiful to be easy – all those glorious colours like a child’s toy, but I wrote out the shopping list and handed it to my darling accommodating husband who does the daily food shopping. All ingredients having safely arrived in the house, I assembled them on the bench and couldn’t resist photographing them in their raw state all piled together in a seemingly casual mess, but it did actually take a while to get the mess looking right though. You have to admit they look pretty and that’s only some of the ingredients. I thought I should get on with the actual recipe or my family wouldn’t be eating.
