Low Fodmap bread I suppose this one shouldn't surprise me since most of my clients are fixated on getting bread back into their diets after doing the 6-week program with me to find their triggers and create a final diet that keeps them safe from symptoms. Many months of experimenting resulted in this bread recipe. If you follow it exactly without any substituting, it will provide you with a delicious, moist, low Fodmap bread. Low Fodmap Salmon and Leek Risotto
This is a recipe fit for your most upmarket of guests. It takes a little work but is well worth it for the compliments. And it is completely low Fodmap so you can enjoy it alongside your guests. You can prepare the sauce and the salmon coating in advance and then all you have to do is make the risotto, putting the salmon in the oven about halfway through since the rice takes 20 minutes and the salmon 10 minutes. Your family will love you for it too. Salmon is high in fat so make sure you only have a small fillet to keep within safe fat levels. Oozy Mushroom Risotto – a Jamie Oliver 30-Minute Meal
Another one of Jamie's 30-Minute Meals - a fairly simple one because I have been making risottos for years without blinking. He adds a lot more herbs than the usual Italian risotto but otherwise it's pretty accurate. I also made the accompanying spinach salad which I didn't photograph because it wasn't particularly photogenic. It was spinach, pine nuts, mint and sundried tomatoes - a good foil to the risotto. This meal also included a quick cheesecake in a glass but, as usual, I didn't make the dessert. The risotto and salad took about 40 minutes altogether. I was able to prepare the salad while adding water to the rice so it was time efficient. This recipe is not low Fodmap. Seafood Risotto – minimal preparation, cooked in 30 minutes
Eating seafood dishes evokes memories from the past when my parents owned a fish processing factory, where I worked in the university holidays. We processed mainly lobsters. They were a common food for our family and we became quite spoilt. Now, it is only on rare occasions that we can justify spending the exorbitant amount necessary to buy one but fortunately there are many other forms of seafood that are just as delicious. Adriano has a mountain biking race on Sunday and he has to start loading up on carbs so tonight I made a risotto with mussels, king prawns and calamari rings. Dario protested at having to remove the prawn tails and open the mussels but a mother can't spoon feed her son forever. He is 21 after all. Mushroom Risotto with Poached Egg
Risotto in its various configurations and permutations is a fairly regular meal around here. Tonight's variation had no meat, white or red. The protein came in the form of a soft boiled egg. The runny yolk flowing over the rice mixture made it colourful and scrumptious. A little lemon juice and the addition of sour cream at the last minute really brought out the flavour in the dish. By the way, this really is a cheat's risotto. The rice shouldn't strictly be cooked separately and then thrown in with the other ingredients but it works flavourwise even if the texture is different. The upside is that it is much simpler and quicker to cook this way. If you are not used to the way the Italians cook it - the correct way - then you won't know the difference. So enjoy! Lemon Chicken & Spinach Risotto
Risotto is a classic Italian meal but you are required to pay quite a lot of attention to it while it cooks. You can't just throw in all the liquid and stick on the lid. That will create a sloppy mess with half left stuck to the bottom of the pot - the dish washer will not thank you. You have to fry the onions and garlic, toast the rice and then add the liquid a ladleful at a time, waiting until it has all been absorbed before adding the next. I'm not at all sure about the science behind this but I do know it works so don't cut corners. This recipe is not low Fodmap.
