This is a recipe fit for your most upmarket of guests. It takes a little work but is well worth it for the compliments. And it is completely low Fodmap so you can enjoy it alongside your guests. You can prepare the sauce and the salmon coating in advance and then all you have to do is make the risotto, putting the salmon in the oven about halfway through since the rice takes 20 minutes and the salmon 10 minutes. This was our dinner last night and the anchovy mayonnaise was a hit. It would be great with many other dishes besides the salmon. I would like to try it with tuna too. There is no excuse for buying processed mayonnaise, which usually contains garlic and onions (watch for the words "natural flavour", which can include garlic and onions). A homemade mayonnaise takes no more than a few minutes if you have a food processor. Salmon is a wonderful protein to eat at least once a week for the Omega 3, which helps neutralize the free radicals in the body which can lead to cancer. Adriano got an upgrade to business class for most of his flight to Italy, a new prince has been born, our capital - Wellington - is shaken to the core by quakes and this is day two of being at work without my boss or co-worker and I am as busy as ever and have had a headache all day. I am trying grain-free at the moment - paleo diet style. You might ask why I am doing first sugar-free and now grain-free. Well, I am trying various different options in an attempt to eliminate certain issues I have been having for years. Probably since I was born actually. When you know no different, it takes a while to click that perhaps this is not the way it should be. I won't go into unnecessary details but I will tell you that it got a lot worse six years when my father died and I took on a very stressful job. Until then, I had coped but now it was painful and limiting. A couple of weeks ago, I was standing in line at the supermarket checkout, which is a rare occurrence since Adriano and Dario do all the shopping. Anyway, the woman in front was stocking up for a natural disaster and I had time to kill so I did exactly what the supermarket owners hope I will do - peruse the tempting array of sweets and magazines within arm's reach. I started flicking through a cooking magazine, wondering why I had broken my own golden rule of never going food shopping on an empty stomach, and succumbed to the excruciatingly gorgeous photographs of deliciously arranged food. It went in the shopping trolley, adding $13 to my bill. It was called New Idea Masterclass and tonight's recipe is one of its 185 recipes.
