Coconut Chocolate Whoopie Pies – grain, dairy, nut and refined sugar-free
I've made only four recipes this weekend for the cookbook and here is one of them. These are super decadent whoopie pies which have all the taste and flavour of the sugar and grain-laden ones. The book has over 40 recipes now so I only need a few more before it is complete. Meanwhile I just wanted to talk to you about something interesting that I found out the hard way. A few months back we had some testing done in our house to test the levels of toxic gases, moisture and unhealthy living conditions. This was not something we commissioned. In fact, someone who was doing a thesis at university approached us about using our house as part of the test for their studies. Most of our house was just fine but one thing came out of the study. Our bedroom had high levels of carbon dioxide, which is detrimental to health. We both always woke up feeling more tired than when we went to bed and I always had a headache. It would take all morning to feel normal again. There were also some other … [Read more...] about Coconut Chocolate Whoopie Pies – grain, dairy, nut and refined sugar-free
Creamy Lemon Slice – grain, sugar, nut & dairy-free
I managed seven recipes this weekend for my cookbook and I am very happy with the results. I thought I would give you another sample of one of the recipe which will be in the book. I am super pleased with this creamy lemon slice. It tastes delightful - everything you would expect from a lemon offering. It sets well, cuts well and keeps beautifully. I am in love with this recipe. In other news, I had the first part of my food intolerance test last Friday and I have found that I am in the 5% of the population who produce methane instead of hydrogen when I digest. No one knows why some people do this. I would have thought it very important but no one cares. We are more like cows than humans, it seems. I will have the second part this week. The result had better be illuminating because otherwise this is a gross waste of time. Three hours sitting and puffing into a machine every 15 minutes is overwhelmingly boring. This is NOT a low Fodmap recipe. Creamy Lemon Slice Print … [Read more...] about Creamy Lemon Slice – grain, sugar, nut & dairy-free

You will have to wait for the recipes and even for the names because that could be giving away too much information. … [Read more...] about Afternoon Tea Cookbook (grain, nut, dairy and sugar-free) – a few teaser photos

Banana, Chocolate, Cranberry & Coconut Muffins
I have just joined the Chocolate Party! It is a great group of food bloggers who bake with chocolate and each month they decide on an extra compulsory ingredient. This month, it is cranberries. I am on a mission to reduce my intake of sugar and that might seem a little contradictory with joining the Chocolate Party but I did say 'reduce' not 'eliminate'. These muffins I made are completely without added sugar except for what is in the chocolate. I found the recipe at The Life of Clare blog and thought they mightn't be sweet enough but was willing to give them a try. In fact, the bananas are enough and that makes these muffins sugarless apart from the chocolate content. How amazing is that? And they taste good! You might have noticed that I am using a new recipe set up, Ziplist. If you click on Save in the recipe, you then create a free account. After that, each time you click on the save button, you add the recipe to your personal recipe box. You can also create a shopping list … [Read more...] about Banana, Chocolate, Cranberry & Coconut Muffins
