Low Fodmap Spinach Gnocchi & IBS Constipation
Those with irritable bowel syndrome have either constipation, diarrhea or they swing between the two. Today I have a video for you with some tips on preventing constipation. Of course, the low Fodmap diet is the most important element in controlling IBS but there are also some other things to keep in mind to help keep you regular. You will get a little surprise in this video - you are about to actually see me live in it for the first time. It's a bit nerve-wracking to show my face but it had to happen sooner or later. Baked Ricotta with Sauteed Vegetables
I saw a recipe for baked ricotta on the My Kitchen Stories blog and decided to make it tonight. The ingredients were great and it tasted fine but I had to cook it much longer to get it to set. Again this could be my loopy oven but I have added to the cooking time in the instructions. Tania placed a massive mushroom on top of each of her baked ricottas but I forgot to put them on the shopping list and so Adriano didn't buy them. The inventiveness of someone who has cooked for many years came into play and I scoured the fridge for an alternative. I had one measly courgette and a jar of roasted peppers under oil so I chopped them all up together with one green chili and threw them in a frying pan with a little olive oil. Grilled Prawn Spaghetti – to celebrate Dario’s graduation
This has been a great day - Dario graduated with a Bachelor of Architecture. He spent a total of four years in formal education, receiving the rest of it at home and yet here he is with a degree. For his celebration dinner, I cooked a recipe I found in Food magazine and then we had a bought cake afterwards. Unfortunately there is no time at night to bake so bought it was. The recipe had a long name - Grilled Prawn Spaghetti with Tomatoes, Capers, Gherkins & Feta and it basically included all the main ingredients. It looked great in the photo and it tasted just as good.
