Low Fodmap Coleslaw

Ingredients
  • ¼ a cabbage
  • 1 carrot
  • 1 stalk of celery
  • 2 spring onions, green part only
  • A small handful of fresh mint
  • Olive oil
  • Lemon juice
  • Salt & pepper
Method
  1. Cut the cabbage into several smaller pieces.
  2. Peel and top the carrot. Cut into smaller pieces.
  3. Chop the celery into 8 pieces.
  4. Chop up the green of the spring onions a little.
  5. Place all the vegetables in a food processor and process into small pieces.
  6. Tip them all out into a serving bowl.
  7. Drizzle over olive oil and lemon juice.'Season to taste.
  8. Mix well and serve.
