Chicken Parmesan - Low Fodmap

Ingredients
  • 4 chicken legs
  • 1 egg
  • Breadcrumbs
  • 2 tbsp oil
  • 1 x 420gm/15oz can of chopped tomatoes
  • ¼ cup water
  • ½ tsp oregano, basil and thyme
  • Salt & pepper
  • 4 slices of mature cheese
  • Parmesan
Method
  1. Beat the egg with 1 tbsp water.
  2. Roll the chicken in the egg and then in the breadcrumbs.
  3. Heat the oil in a deep frying pan and brown them all over.
  4. Mix the rest of the ingredients in a bowl except the cheese and pour over the chicken.
  5. Cover and cook for 45 minutes.
  6. Place a slice of cheese on each leg and heat until the cheese melts.
  7. Serve with grated Parmesan cheese.
