Snowball Cookies - Low Fodmap

Ingredients
  • 1 cup/226gms softened butter
  • ½ cup of icing sugar
  • 1 tsp vanilla essence
  • 1.25 cups white rice flour
  • ½ cup tapioca flour
  • ½ cup potato starch
  • 1.2 tsp salt
  • ½ cup dark chocolate, chopped up
Method
  1. Heat oven to 180°C/350°F.
  2. beat the butter, vanilla and icing sugar together until they are light and fluffy.
  3. Sift all the dry ingredients together.
  4. Mix the chopped chocolate, together with the dry and wet ingredients to form a batter.
  5. Form it into small balls by wetting your hands and rolling between your palms.
  6. Place on a baking tray which has been lined with baking paper.
  7. Bake for 10 minutes.
  8. Let cool before handling them because they are fragile.
  9. When cooled, sprinkle icing sugar over the top.
