Meatloaf Roulade - low Fodmap

Ingredients
For the meat
  • 450gms/1lb mincemeat
  • 2 spring onions, sliced (green part only)
  • 1 tsp garlic-infused oil
  • 1 egg
  • 2 tbsp chopped parsley
  • 1 tbsp dried mustard
  • 2 tsp dried thyme
  • 1 tbsp crushed coriander seeds
For the stuffing
  • 4 potatoes, cooked and mashed
  • A bunch of spinach or silverbeet, lightly steamed
  • Mature cheese
  • Salt & pepper
  • 6 slices of streaky bacon.
Method
For the meat
  1. Combine all the ingredients and mix well.
  2. Spread the mixture out on a sheet of baking paper to form a square. Keep it fairly thin.
For the assembly
  1. Heat oven to 180°C/350°F.
  2. Spread the mashed potato out all over the square.
  3. Lay the cooked spinach/silverbeet over the potatoes.
  4. Grate the cheese on top.
  5. Using the paper to help you, roll the roulade up and seal the ends.
  6. Place (with the paper) into an oiled loaf tin and cut off the excess paper, leaving enough to help you remove it from the tin.
  7. Lay the slices of bacon over the top.
  8. Place in the oven and bake for about 45 minutes.
  9. Remove from the oven and let sit for 5 minutes.
  10. Take out of the tin, using the paper and roll onto a wooden board.
  11. Serve in thick slices.
