Peanut Butter & Cranberry Truffles – low Fodmap

Ingredients
  • 3 cups instant oats
  • 1 cup smooth peanut butter
  • ½ cup maple syrup
  • 1 tsp vanilla essence
  • ½ cup dried cranberries
  • ½ cup walnuts, chopped
  • Shredded coconut
Method
  1. Mix together all the ingredients.
  2. Refrigerate for ½ hour.
  3. Roll small balls of the mixture into coconut to coat.
  4. Keep in the fridge.
