Banana Coconut Ice Cream - Low Fodmap and Gluten-Free
  • 4 bananas
  • 2 tbsp shredded coconut
  • 2 cups plain lactose-free yogurt
  1. Freeze the bananas overnight.
  2. Peel the bananas with a potato peeler and cut into chunks.
  3. Place all ingredients in a blender and blend until well mixed.
  4. Pour into an appropriate container.
  5. Cover with plastic wrap and place in the freezer for several hours or overnight.
  6. Use an ice cream scoop to serve.
