Banana Cake - Low Fodmap and Gluten-Free

- 125 gms/4.4oz softened butter
- 1 cup caster sugar
- ¼ cup brown sugar
- 3 eggs
- 2 cups gluten-free flour
- 2 tsp baking powder
- 1 tsp cinnamon
- ¾ cup lactose-free yogurt
- 1 cup mashed banana
- Heat oven to 180°C/350°F.
- Place butter and sugar in a bowl and mix with an electric blender until fluffy and pale.
- Add the eggs one at a time and mix well.
- Sift the dry ingredients together and fold into the butter.
- Add the yogurt and banana and stir to combine.
- Spoon mixture into a buttered, lined cake tin and bake for around 40 minutes or until a skewer comes out clean.
- Cool on a wire rack.
