Banana Cake - Low Fodmap and Gluten-Free
  • 125 gms/4.4oz softened butter
  • 1 cup caster sugar
  • ¼ cup brown sugar
  • 3 eggs
  • 2 cups gluten-free flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ¾ cup lactose-free yogurt
  • 1 cup mashed banana
  1. Heat oven to 180°C/350°F.
  2. Place butter and sugar in a bowl and mix with an electric blender until fluffy and pale.
  3. Add the eggs one at a time and mix well.
  4. Sift the dry ingredients together and fold into the butter.
  5. Add the yogurt and banana and stir to combine.
  6. Spoon mixture into a buttered, lined cake tin and bake for around 40 minutes or until a skewer comes out clean.
  7. Cool on a wire rack.
