Beef, Feta and Roasted Pepper Open Sandwiches

Ingredients
  • A thick slab of sirloin steak
  • Feta cheese
  • 2 red peppers
  • Parsley
  • Garlic infused oil
  • Olive oil
  • Pepper & salt
  • Gluten-free bread - sliced
  • Horseradish sauce
  • Pesto (optional)
Method
  1. Grill the steak until medium rare and let rest for 5 minutes. Cut into slices.
  2. Char the peppers under the grill until the skin is black. Remove the skins.
  3. Slice up the peppers and mix with one tablespoon of garlic-infused oil, one tablespoon of olive oil and chopped up parsley. Season the mixture.
  4. Toast one side of the sliced bread, then remove and place a slice of feta on top. Place under the grill again for a short time.
  5. Top with the peppers and a slice or two of steak.
  6. Place a small teaspoon of horseradish in the middle of the steak and top with a blob of pesto if you have some handy.
