Fish Omelette - Low Fodmap & Gluten-Free
Serves: 2-3
  • 6 eggs
  • 6 tbsp lactose-free milk
  • 2 fillets of white fish
  • 1 red chilli (optional) - de-seeded and chopped finely
  • 2 spring onions - green part chopped
  • Light olive oil
  • 2 handfuls of baby spinach
  • Salt and pepper
  • Coriander (cilantro), chopped roughly
  • Parmesan cheese
  1. Put on the grill in the oven.
  2. Heat the oil in a pan and add the spring onion and chilli.
  3. Cook 1 minute.
  4. Chop up the fish and add to the pan.
  5. Mix eggs, milk, salt and pepper and beat together.
  6. Add the spinach to the eggs.
  7. When the fish is almost cooked through, add the eggs to the pan.
  8. Cook until the base is set.
  9. Sprinkle with the coriander (cilantro), grate some Parmesan cheese over the omelette and place in the oven to firm up the top.
  10. Remove and serve hot.
