Tofu Tacos - low Fodmap

Ingredients
  • Low Fodmap tortillas
  • Firm tofu
  • Casa de Sante Mexican spice seasoning
  • Tomatoes, chopped up
  • Corn
  • Grated mature cheese
  • Yogurt
  • Coriander/cilantro
  • Spring onion – green part only
  • Salt and pepper
Method
  1. Chop the tofu into small squares and toss in the spice mix.
  2. Heat a little light olive oil and cook the tofu until brown.
  3. Blend the coriander, yogurt and spring onions in a food processor.
  4. Season to taste.
  5. Heat the tortillas.
  6. Pile some tofu onto each tortilla and top with the other ingredients.
  7. Drizzle over the yogurt dressing.
  8. Fold the tortillas and serve.
