Salmon Baked Eggs - low Fodmap

Ingredients
  • 50g/2 tbsp butter
  • 1 leek, thinly sliced – green part only
  • 200g/7 oz sliced smoked salmon
  • 2 tbsp chopped herbs (of your choice – I used parsley)
  • ½ cup cream or crème fraiche
  • Salt & pepper
  • 6 eggs
  • ¼ cup Parmesan – grated
Method
  1. Turn on oven to 180°C/350°F.
  2. Grease six ovenproof dishes (2/3 cup capacity) with half the butter.
  3. Place dishes on an oven tray.
  4. Heat remaining butter in a frying pan. Add leek. Cook over medium heat until soft.
  5. Remove from heat. Stir in salmon, herbs and cream. Season.
  6. Divide leek mixture among prepared dishes.
  7. Crack an egg into each dish.
  8. Sprinkle with Parmesan.
  9. Place in the heated oven for about 18 minutes or until egg white is set and yolks are still soft.
  10. Serve with extra herbs as a garnish.
