Low Fodmap Salmon and Spinach Stack

Ingredients
  • 17.6oz/500gms potatoes
  • Salt and pepper
  • 1-2 tbsp olive oil
  • 4 cups of spinach
  • 3.5oz/100gms smoked salmon
Hollandaise Sauce
  • 1 egg yolk
  • ½ tbsp lemon juice
  • ¼ cup salted butter
Method
  1. Peel and grate the potatoes.
  2. Squeeze out all the liquid – the drier the better.
  3. Mix in a little salt and pepper.
  4. Heat the oil and place 4 large dollops of the potato mixture in the pan and flatten to form patties.
  5. Fry on both sides until brown.
  6. Remove and place on paper towels to drain as much of the oil as possible.
  7. Place a few spoonfuls of water in a saucepan and add the washed and chopped up spinach.
  8. Heat until the spinach is just wilted.
  9. Pile on top of the potato patties.
  10. Layer over slices of the salmon.
Hollandaise Sauce
  1. Place the egg yolk and lemon juice in a small food processor and process to mix together.
  2. Melt the butter.
  3. While the machine is still going, drizzle in the melted butter until it is all incorporated.
  4. Check seasoning.
  5. Spoon over each patty.
