Low Fodmap Roasted Potatoes

  • 4 potatoes
  • Olive oil
  • Sea salt
  • 1 tbsp fresh rosemary
  • 1 tbsp grated orange peel
  • Splash of vinegar
  • 1 tsp garlic oil
  • Salt and pepper
  1. Heat the oven to 350ºF/180ºC.
  2. Peel or scrub clean the potatoes and cut up.
  3. Parboil the potatoes for 10 minutes.
  4. Drain them in a colander and shake them around to fluff them up.
  5. Oil the bottom of a baking tray and place the potatoes on top then drizzle oil over them. Season them with salt.
  6. Bake them for 30 minutes.
  7. Meanwhile mix together the last 5 ingredients.
  8. Remove the potatoes from the oven and pour the oil mixture over them and mix around to make sure they are all coated, turning them at the same time.
  9. Place back in the oven for another 30 minutes.
  10. Serve hot.
