Coconut Banana Cookies
 
Ingredients
  • ¼ cup coconut flour
  • ½ cup oil
  • 2 tbsp sugar
  • 1 ripe banana
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • pinch salt
  • ½ tsp baking soda
  • 1 cup coconut
Method
  1. Heat the oven to 350°F/180°C.
  2. Mix the dry ingredients, oil, banana and sugar in a food processor.
  3. Add the eggs and vanilla and mix.
  4. Remove the mixture from the food processor to a bowl and add the coconut.
  5. Place a sheet of baking paper on an oven tray.
  6. Drop big spoonfuls of the dough onto the paper and shape them into circles.
  7. Bake about 10 minutes until they are golden but still soft.
  8. Remove from the oven and leave to cool on the tray for half an hour so they firm up a little.
