Chocolate Chip Cookies

- 65gms/2.3oz unsalted butter
- ¾ cup brown sugar
- 1 large egg
- ½ tsp vanilla extract
- ½ cup white rice flour
- ½ cup brown rice flour
- ¼ cup tapioca flour
- ¼ cup potato starch
- ½ tsp baking soda
- pinch of salt
- 1 tsp cinnamon
- 1 cup dark chocolate drops
- Heat oven to 180°C/350°F.
- Cream together the butter and sugar until light and fluffy.
- Add the egg and beat again until well incorporated and the mixture becomes thick.
- Add the vanilla and mix in.
- Sift all the dry ingredients together.
- Mix the wet ingredients with the dry.
- Add the chocolate drops and fold in.
- Chill the mixture in the fridge for ½ an hour.
- Line a baking tray with baking paper.
- Roll the mixture into balls about the size of a ping pong ball and place on the tray. Flatten them a little.
- Bake for 12 minutes.
