Chocolate Chip Cookies
  • 65gms/2.3oz unsalted butter
  • ¾ cup brown sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup white rice flour
  • ½ cup brown rice flour
  • ¼ cup tapioca flour
  • ¼ cup potato starch
  • ½ tsp baking soda
  • pinch of salt
  • 1 tsp cinnamon
  • 1 cup dark chocolate drops
  1. Heat oven to 180°C/350°F.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the egg and beat again until well incorporated and the mixture becomes thick.
  4. Add the vanilla and mix in.
  5. Sift all the dry ingredients together.
  6. Mix the wet ingredients with the dry.
  7. Add the chocolate drops and fold in.
  8. Chill the mixture in the fridge for ½ an hour.
  9. Line a baking tray with baking paper.
  10. Roll the mixture into balls about the size of a ping pong ball and place on the tray. Flatten them a little.
  11. Bake for 12 minutes.
