Baked Potatoes
  • 4 large baking potatoes
  • Olive oil
  • Salt + pepper
  • Sour cream
  • Mint, finely chopped
  • Lemon juice
  • Parmesan
  1. Heat oven to 180°C/350°F.
  2. Scrub the potatoes, then season them and coat them in olive oil.
  3. Wrap them in tin foil and place them on a baking tray.
  4. Place in the oven and bake for about an hour.
  5. Mix a pot of sour cream, mint and a little lemon juice together.
  6. Season with salt and pepper.
  7. When the potatoes are baked, remove them from the oven.
  8. Cut a cross in the top right through the tin foil and squeeze the potatoes from the bottom to open them out a little.
  9. Place a dollop of the sour cream mixture in the cut and sprinkle over some mint and grated Parmesan.
  10. Serve piping hot with some extra sour cream in a bowl.
