Low Fodmap Potato Salad
  • 4 medium potatoes
  • 5 slices of bacon
  • 2 dsp balsamic vinegar
  • 2 dsp olive oil
  • Salt & pepper
  • Fresh mint
  1. Boil the potatoes in their skins and peel afterwards.
  2. Cut into slices and layer on a plate or shallow bowl.
  3. Trickle over the oil and season.
  4. Heat the vinegar and pour over the potatoes.
  5. Fry or grill the bacon and cut into pieces.
  6. Scatter over the potatoes.
  7. Chop up the mint and sprinkleover the top.
