Mini Meat Loaves - low Fodmap & gluten-free

Serves: 6 loaves
- 500gms/17.5oz mince meat
- 2 slices gluten-free bread
- 1 tsp paprika
- 2 tsp fennel seeds
- 1 egg
- 1 tbsp chopped parsley
- Salt & pepper
- 1 can of tomato soup (onion and garlic-free)
- Place all the ingredients but the meat and soup in a food processor and process until crumbs form.
- Add to the meat and mix well with your hands.
- Shape the meat mixture into small loaves and fry in a little oil to brown all edges.
- Add the soup, put a lid on and simmer for 15 minutes.
- Serve with the soup spooned over the top.
