Mini Meat Loaves - low Fodmap & gluten-free
Serves: 6 loaves
  • 500gms/17.5oz mince meat
  • 2 slices gluten-free bread
  • 1 tsp paprika
  • 2 tsp fennel seeds
  • 1 egg
  • 1 tbsp chopped parsley
  • Salt & pepper
  • 1 can of tomato soup (onion and garlic-free)
  1. Place all the ingredients but the meat and soup in a food processor and process until crumbs form.
  2. Add to the meat and mix well with your hands.
  3. Shape the meat mixture into small loaves and fry in a little oil to brown all edges.
  4. Add the soup, put a lid on and simmer for 15 minutes.
  5. Serve with the soup spooned over the top.
