Rice Salad

- 2 cups of uncooked rice
- 1 orange bell pepper, chopped
- 2 stalks of celery, chopped
- 1 tbsp capers
- ½ cup chopped gherkins
- ¼ cup chopped pickled jalapenos
- 1 can tuna chunks in spring water
- 2 tbsp chopped sundried tomatoes
- Cubed mature cheese
- 3 eggs, boiled and sliced
- 1 tbsp tomato sauce
- Juice from ½ lemon
- 1 tbsp olive oil
- Salt & pepper
- 2 heaped spoonfuls of mayonnaise
- Cook the rice according to the packet instructions.
- Rinse it through with cold water and drain.
- Mix the oil, tomato sauce, lemon juice and mayonnaise together and add to the rice.
- Add all the other ingredients. You could use the eggs to decorate the salad.
- Season to taste.
- Serve cold.
