Rice Salad

Ingredients
  • 2 cups of uncooked rice
  • 1 orange bell pepper, chopped
  • 2 stalks of celery, chopped
  • 1 tbsp capers
  • ½ cup chopped gherkins
  • ¼ cup chopped pickled jalapenos
  • 1 can tuna chunks in spring water
  • 2 tbsp chopped sundried tomatoes
  • Cubed mature cheese
  • 3 eggs, boiled and sliced
  • 1 tbsp tomato sauce
  • Juice from ½ lemon
  • 1 tbsp olive oil
  • Salt & pepper
  • 2 heaped spoonfuls of mayonnaise
Method
  1. Cook the rice according to the packet instructions.
  2. Rinse it through with cold water and drain.
  3. Mix the oil, tomato sauce, lemon juice and mayonnaise together and add to the rice.
  4. Add all the other ingredients. You could use the eggs to decorate the salad.
  5. Season to taste.
  6. Serve cold.
