I have never used skirt steak before but got curious about it and ventured into an unknown realm. Adriano's butcher had some secreted out the back and was surprised at the request because it is not a popular cut here. It is very flavorful but can be tough. The secret is to let it marinate for a while with a wet rub on it and the steak will tenderize nicely. It also must be grilled hot and fast and mustn't be overcooked. Why the butcher had some out the back if he thought no one would buy it was never revealed. But maybe he buys entire cows at a time and there is a skirt steak in each beast and he can't send it back. That's right - only one skirt steak per cow, but it's big. You would think this would make it rare and expensive but that was not the case. Maybe he was happy to see the back of it. Make up a strong marinade with heaps of flavour and leave it for between four and six hours. Feta Cheese, Arugula and Poached Egg Open Sandwich
Open faced sandwiches feel more like lunch, put a poached egg on top and they feel like breakfast. But we had these for dinner. They created a completely balanced meal with carbs, vegetables and protein. They're also quick to make and look pretty. This is not a low Fodmap recipe. Feta Cheese, Arugula and Poached Egg Open Sandwich Print Author: Suzanne Perazzini Ingredients Slices of rye or sourdough bread A packet of arugula Alfalfa sprouts Can of corn Olive oil Lemon juice Salt & pepper One egg for each sandwich Feta cheese Grated Parmesan Dried thyme A chilli - sliced finely Paprika Method Toast or grill the bread. Crumble the feta and mix with the Parmesan, thyme and a little lemon juice. Dress the arugula and sprouts with oil, lemon juice, salt and pepper. Poach the eggs. Assemble the sandwiches. Mushroom Risotto with Poached Egg
Risotto in its various configurations and permutations is a fairly regular meal around here. Tonight's variation had no meat, white or red. The protein came in the form of a soft boiled egg. The runny yolk flowing over the rice mixture made it colourful and scrumptious. A little lemon juice and the addition of sour cream at the last minute really brought out the flavour in the dish. By the way, this really is a cheat's risotto. The rice shouldn't strictly be cooked separately and then thrown in with the other ingredients but it works flavourwise even if the texture is different. The upside is that it is much simpler and quicker to cook this way. If you are not used to the way the Italians cook it - the correct way - then you won't know the difference. So enjoy! Couscous with Sausages and Peppers
Another simple recipe for those work nights when you get home at 6.30pm then need to exercise before cooking. This recipe is not low Fodmap. Couscous with Sausages and Peppers Heat together: 1/4 cup of vinegar 1 + 3/4 cup of water 1 tsp of honey 1 tbsp of mustard Turn off heat once it reaches the boil and add two cups of couscous. Put the lid on and let it soak for 3 minutes. Meanwhile chop up three red, yellow or green peppers into small squares. Cut 200g feta into squares. Cook six of your favourite sausages and slice them up. Fluff up the couscous with a fork and mix all ingredients together.
