You might remember a while back I got some wonton wrappers, broke them up into three lots and froze them. I used one lot to make the mini lasagna recently and tonight I decided to make ravioli with them. At the last minute, Adriano decided to go down country to a race and I was left alone with Dario after having expected to go out for dinner. So I had to use what I had in the house and that was the frozen wonton wrappers. I went on the net looking for ravioli recipes and found a video with the chef, Yotam Ottolenghi making this recipe. It was simple with few ingredients so I knew this was it. Baked Ricotta with Sauteed Vegetables
I saw a recipe for baked ricotta on the My Kitchen Stories blog and decided to make it tonight. The ingredients were great and it tasted fine but I had to cook it much longer to get it to set. Again this could be my loopy oven but I have added to the cooking time in the instructions. Tania placed a massive mushroom on top of each of her baked ricottas but I forgot to put them on the shopping list and so Adriano didn't buy them. The inventiveness of someone who has cooked for many years came into play and I scoured the fridge for an alternative. I had one measly courgette and a jar of roasted peppers under oil so I chopped them all up together with one green chili and threw them in a frying pan with a little olive oil. Courgette & Cheese Fritters – Low Fodmap
Adriano cooks on Friday, Saturday and Sunday nights. Part of his routine is to pour himself a glass of wine and open a packet of crisps or something similar to munch on. He also brings me, in my study, half a glass of wine and a few of his nibbles in a bowl. For me, this a symbol of the days when I am not working and I can do my own thing. But the crisps are not exactly healthy; in fact they are super unhealthy. So, on Saturday, I decided to make our nibbles myself and this might become a part of the routine rather than bake cupcakes or something equally decadent which are not kind to the waistline. For this first venture into nibbles land, I made these tasty little fritters with grated courgette, cheese and sundried tomatoes and fried them in a little oil to crisp them on the outside. Mediterranean Pies – Low Fodmap
I have a mission to create small portions so I can't overeat. The two dishes in the photo were for me and Dario. I made a massive one for Adriano and he ate it all without blinking. I thought there would be enough saltiness in the bacon so added only a wee bit extra salt to the egg mixture. Adriano thought it needed more but I didn't, so tread carefully with the seasoning. This really is nothing more than a fancy omelet wrapped in bacon, but it looks better like this in dishes rather than slopped on a plate. And the most important thing was that once I had finished mine, there was no more to eat. I guess this dish is gluten-free too. I had planned to serve it with a loaf of crusty bread but it got all eaten before dinner so I made some potatoes and a mixed salad. Mini Chicken Lasagnas with Wonton Wrappers
You will have seen the photo story of lasagna making I photographed in Italy and now I have made my own quick version. There is no comparison but we working mothers and wives have to find shortcuts or we would have to wag work in order to make the original versions of these time-honoured recipes. It was such a pleasure to watch the making of the pasta sheets from scratch but I used wonton wrappers. It was the first time I had used them and I was pleasantly surprised at how easy they are to handle. They separate easily and don't rip. I will be using them again for all sorts of things. I decided to make this a chicken lasagna to shake it up a little and also to not seem to be imitating the lasagna that Laura made in Italy. I really loved the fact that these lasagnas popped out of their containers without hassle. That made them easy to eat. Roasted Salmon and Crispy Potatoes
I am back on board again after such a great holiday with family and visiting family in Italy. But all good things come to an end and far too quickly. Not that my every day life is to be sniffed at. I have an enjoyable job with good bosses, a wonderful husband and son and I get to blog in my spare time about food. What can beat that? Last night, I felt a need for healthy and nutritious, so salmon (all that omega 3 stuff) and spinach (made Popeye strong) were employed along with some great crispy potatoes. There's probably a little too much oil to be on a slimmer's menu but it tasted great and the scales didn't complain afterwards.
