Risotto in its various configurations and permutations is a fairly regular meal around here. Tonight's variation had no meat, white or red. The protein came in the form of a soft boiled egg. The runny yolk flowing over the rice mixture made it colourful and scrumptious. A little lemon juice and the addition of sour cream at the last minute really brought out the flavour in the dish. By the way, this really is a cheat's risotto. The rice shouldn't strictly be cooked separately and then thrown in with the other ingredients but it works flavourwise even if the texture is different. The upside is that it is much simpler and quicker to cook this way. If you are not used to the way the Italians cook it - the correct way - then you won't know the difference. So enjoy! Couscous with Sausages and Peppers
Another simple recipe for those work nights when you get home at 6.30pm then need to exercise before cooking. This recipe is not low Fodmap. Couscous with Sausages and Peppers Heat together: 1/4 cup of vinegar 1 + 3/4 cup of water 1 tsp of honey 1 tbsp of mustard Turn off heat once it reaches the boil and add two cups of couscous. Put the lid on and let it soak for 3 minutes. Meanwhile chop up three red, yellow or green peppers into small squares. Cut 200g feta into squares. Cook six of your favourite sausages and slice them up. Fluff up the couscous with a fork and mix all ingredients together. Bacon, Feta and Hazelnut Salad – a quick and complete meal
Yesterday I saw a bit of a Jamie Oliver programme on TV and he was in France roughing it in the country following a hunt for wild boar. Anyway, one of the dishes he cooked looked simple and full of strong flavours so I tried it tonight. I love all-in-one salad-style meals which cover each of the food groups and I make them often. I must admit, I substituted a few ingredients out of preference and it still turned out just fine - more than just fine actually. So to the ingredients: Bacon, Feta and Hazelnut/Walnut Salad Mixed salad leaves Bacon chopped into squares - the thicker the better, not finely sliced Spring onions - sliced Ciabatta or a similar loaf of bread cut into crouton-type hunks.
