Banana Coconut Ice Cream – Low Fodmap and Gluten-Free
A simple yet perfectly healthy low Fodmap dessert is the offering today. Even though the weather is still cold here in New Zealand, I can't get that extreme heat in Europe out of my mind. I never thought I'd say that I prefer the cold over the heat but at the moment I do. The only thing that gave any relief over in Europe was a lovely luscious ice cream - remember I don't malabsorb lactose. However, when I create a recipe for this blog, I take into account the 25% of you with IBS who do malabsorb lactose, and this is appropriate for you. However, if you don't have lactose issues, you could replace half the yogurt with whipped cream if you wanted to. You could also use any low Fodmap fruit though be careful of those that are too watery or ice crystals will form. The coconut can also be replaced with various other flavour enhancers. We all have gas and need to pass it so what is it that makes this natural process so traumatic in those with irritable bowel syndrome? There is a difference and it is not the amount of gas we accumulate. Watch my video to find out what the issue is. Flatulence or passing wind, breaking wind, passing gas, farting, however you want to call it. The medical term is flatus, F-L-A-T-U-S. How does this happen? It happens by the contracting of the muscles in the intestine and the colon which pushes the wind down towards the rectum. How do we get the gas inside of us? It can be from swallowing air, and that can be because we are talking while we're eating, or we're eating too fast and gulping in air or we're eating in a stressed situation. Plitvice National Park
We have just got home from our month away, tired but full of sights, sounds and experiences. And none more spectacular than the lakes of Plitvice National Park in Croatia. They are jaw-droppingly beautiful. We had thought we would do the smallest circuit of a couple of hours walk but ended up doing four and a half hours because we couldn't get enough of the incredible colours and clarity of the waters as well as the simple beauty of the wilderness. But it was only wilderness in the sense that it was pretty much unspoilt except for the paths and the mass of people who come to enjoy the park every day - over one million visit every year. The further away from the starting point we got, the less people there were but at times it was busier than rush hour in a major city as you will see in my video below. The park is on the register of Unesco World Heritage sites and covers 296.85 square kilometres with 16 lakes all interlinked with cascades. An Extraordinary Place to have Your Ashes Scattered
We have been in the Dolomites in Italy for three days now and today we went to see where Adriano's mother's ashes were scattered when she died not long ago. She has been laid to rest in a stunning place called Val Corpassa. There is no way that a soul wouldn't find peace there. Each summer, when the temperatures in Rimini got too unbearable, she would go into the Dolomites for some relief and to return to the place of her upbringing. Now she has gone full circle and returned forever. Our Italian Meals
So far, so good with my meals in Italy. I have had no issues at all but I do make my needs clear in advance and everyone - restaurants and family - have been very accommodating. I am very glad I have no problems with lactose though - all those delicious ice creams. However, I do have to go easy because of the sugar content. I am also able to eat a certain amount of wheat but not every day or the constipation starts to play up.
