If you often have guests over to eat but you don't always have a lot of time to prepare something delicious, then this recipe is for you. My inspiration came from one of Jamie Oliver's recipes in his 15 Minute Meals cookbook. I have, of course, made it low Fodmap and gluten-free. As always with Jamie's "quick" meals, it took longer than he says but it was still doable in under half an hour and was quite delicious. I am sure your guests would not complain. Jamie served the meal with fried okra so I went hunting for it and found it. This is the first time I have tried it and it was pleasant but without a lot of taste. By the way, we can only have 4 pods. Perhaps fried zucchini would be an alternative if you can't find any okra. If you love Mexican food but have to eat low Fodmap, all is not lost. The main part that is an issue is usually the sauce which contains onion and garlic. So, we have to make everything from scratch and can't rely on bought processed foods. But it really isn't hard. Check out this layered pie with a polenta base and chicken topping. We had this delicious potato pie last night for dinner and it was a meal in one. I got the base recipe from Spicie Foodie HERE and then added a few things and converted it to low Fodmap. Banana Coconut Ice Cream – Low Fodmap and Gluten-Free
A simple yet perfectly healthy low Fodmap dessert is the offering today. Even though the weather is still cold here in New Zealand, I can't get that extreme heat in Europe out of my mind. I never thought I'd say that I prefer the cold over the heat but at the moment I do. The only thing that gave any relief over in Europe was a lovely luscious ice cream - remember I don't malabsorb lactose. However, when I create a recipe for this blog, I take into account the 25% of you with IBS who do malabsorb lactose, and this is appropriate for you. However, if you don't have lactose issues, you could replace half the yogurt with whipped cream if you wanted to. You could also use any low Fodmap fruit though be careful of those that are too watery or ice crystals will form. The coconut can also be replaced with various other flavour enhancers. Oatmeal Cupcakes
My family miss all the baking I used to do, so I am always looking out for healthy sweet treat ideas. Usually, I invent them but I will also use another person's recipes if I think they look like they could work. This one came from Kate Scarlata's blog Well Balanced, but I added 1/2 cup of shredded coconut and 1/2 cup of chopped walnuts, and I am sure you could come up with other additions. I topped some with raspberries and walnuts while in others, I dug a little hole in the top and filled with blueberry jam. They are a really good idea with only a minimum of sugar and lots of healthy goodness. Once the family have finished eating what they can get into their tummy's today, I will freeze the rest. Rustic Chicken and Veggie Tart – Low Fodmap and Gluten-free
It was dinner time again - yes, it comes around once a day! And what to cook? There were a couple of sheets of puff pastry in the freezer and plenty of veggies as well as leftover chicken. So the Rustic Chicken and Veggie Tart was born. Instead of the pastry, I could have used my bread roll recipe which works brilliantly as a pizza base and so would work for this. I do have to confess that I was feeling lazy so I made the full tarts for Adriano and Dario and I piled the filling into a small pottery dish for me - as you can see in the photo above. However, I have added the link to the bread rolls in the recipe. I know it will work for those who have to be wheat-free. It was very yummy even without any crust and the sweet potato supplied the necessary carbs so the pastry is not strictly necessary.
