Adriano and I were watching a cooking competition called My Kitchen Rules on the television and one of the contestants cooked a Greek moussaka dish, which the judges weren't very happy with. I said that I could make a better one than that and Adriano said he wanted it the next night. So I had to back up my words with action, and the next evening saw me making a moussaka. An hour and a half later, this was the beauty that emerged. Why does everything always take so much longer than expected? Anyway, the judge (my husband) couldn't complain about this moussaka and I didn't have to eat my words, as well as the dish. Here is another way to use the basic bread dough that I use for bread rolls and pizza bases. It rolls out well and any small tears can easily be mended. I saw an Italian lady make this dish on TV the other day. It looked quite stunning, and she made it look simple and quick. You would think that I had learned by now that cooking programs are very deceptive because of all the off-camera help the front person has. This would be suitable to make for guests but perhaps not for the family since it took ages to make. Thank goodness I started early because I was wanting to take photographs. I can say that it was worth it in the end but I can never reconcile taking several hours to make a meal to have it all demolished in 10 minutes. But maybe you are quicker at cooking than me. Bacon & Spinach Risotto – Low Fodmap & Gluten-Free
Risotto is one of those dishes that I learned to make while I was in Italy. It's all about letting the liquid absorb in between cupfuls. That lets the starch do its work, and the risotto becomes creamy. You can do any number of flavour combinations - they might not be authentically Italian but that should not hold you back. I created a flavourful base of chilli and ginger then made a tomato/stock/wine mixture for the liquid. At the last minute I added cheese, spinach and cooked chopped bacon.
