I am trying grain-free at the moment - paleo diet style. You might ask why I am doing first sugar-free and now grain-free. Well, I am trying various different options in an attempt to eliminate certain issues I have been having for years. Probably since I was born actually. When you know no different, it takes a while to click that perhaps this is not the way it should be. I won't go into unnecessary details but I will tell you that it got a lot worse six years when my father died and I took on a very stressful job. Until then, I had coped but now it was painful and limiting. I tried seeing doctors but that can be a useless path to take if you don't have a broken bone which is easy to diagnose so I eventually gave up on that. We had these for dinner but made smaller they would work perfectly as finger food with a glass of wine. The flavours work well together. Today, I was checking my statistics to see who was viewing my blog and I saw several hits coming through from Youtube but I don't have any videos on there so I had to investigate and followed the links back and found a young girl talking about her November favourite things and she mentioned my Jamie Oliver recipe of cauliflower macaroni cheese as one of her favourite recipes. Some of her tens of thousands of followers have been visiting me. If you do follow the link to see her video, beware that it really is for young teenagers. Jamie’s 30 Minute Beef Hash & Jacket Potatoes
Here we go again - the Jamie's 30-Minute Meals challenge. And this time I didn't leave anything out because there was no dessert, so I was pretty nervous we would be eating at midnight. There were four different dishes so it seemed a little overwhelming but I rolled up my sleeves, turned on the oven, got out all the ingredients and the food processor and started work. About 40 minutes later, I lifted my head and surprisingly it was all done. Not bad at all and a lot of food had been prepared. The family tucked in and were impressed. This is good homely style food which is perfect for the cold winter we are having. Jamie Oliver’s 30 Minute Cauliflower Macaroni Cheese
I'm back with another one of Jamie's 30-Minute Meals dishes. This one was his Cauliflower Macaroni dish, which he served with a green salad and a dessert, which, as usual, I didn't make. I decided not to bust a gut tonight trying to get it done in 30 minutes. In theory it should have taken 30 minutes because the total of the cooking was 11 minutes for the pasta and cauliflower and then 8 minutes in the oven with not a lot of preparation. But it still took me 45 minutes. Today I was reading another blog called Hotly Spiced and she also tried unsuccessfully to make one of Jamie's meals in 30 minutes. Her account of her attempt was hilarious and worth reading. Ham, Cheese & Sundried Tomato Omelette – Low Fodmap
I had some of the cauliflower couscous left over from last night so thought I would do something quick and easy to go with it. I had all the ingredients for an omelette in the fridge so I made an Italian version with ham, cheese, sundried tomatoes and basil. The only problem is keeping the cooked ones warm while the others are cooking. I guess you could buy enough frying pans to have them all on the stove at once and multi task. That sounds kind of fun actually but I only have two of a decent size so I did them two by two. Now you might ask why I made four when there are only three of us but Adriano has a race on the weekend so I am calorie-loading him once again and he eats for two. Pasta with Ham, Cherry Tomatoes & Arugula
Sometimes the need for a good dish of pasta is strong. There are so many different sauces you can create that there's not really any need to go shopping specifically for the ingredients. I just look in the fridge and see what I have and create something based on what I find. Such is this recipe. I love the clean flavours of a sauce which is barely cooked and can be thrown together in a few minutes. This is not a low Fodmap recipe. Pasta with Ham, Cherry Tomatoes & Arugula Print Author: Suzanne Perazzini Ingredients Spaghetti Cherry tomatoes Arugula Garlic Parmesan Spring onions Olive oil Coriander (basil would be even better) Salt & pepper Pasta Method Boil the pasta until al dente and drain.
