Casa Raia – our beautiful Tuscan home for a week
This is the splendid villa we are staying at in Tuscany near Montalcino. It was originally a farmhouse with the animals living in the stalls on the ground floor with the family living above. It is now fully restored and renovated into a 4 bedroom home with all the expected features of stone walls and brick floors. The terrible temperatures of our first day here have disappeared to leave the days balmy and pleasant - thank goodness. Last night we all (me, husband, son, sister, her husband and son) ate out at a good restaurant in the centre of Montalcino. I directly asked the owner/waiter what he could offer me while taking my Fodmap restrictions into a account and he brought me guinea fowl cooked in a lemon sauce with spinach. It was delicious. I have a client who is in Sardinia at the moment and she was struggling so I told her to ask the hotel about gluten-free food and they are now making her special gluten-free bread rolls on demand. We know now that the FODMAPs in foods can cause symptoms of IBS, and the FODMAPs are the short-chain carbohydrates. We have to avoid high FODMAP foods. Oatmeal Cupcakes
My family miss all the baking I used to do, so I am always looking out for healthy sweet treat ideas. Usually, I invent them but I will also use another person's recipes if I think they look like they could work. This one came from Kate Scarlata's blog Well Balanced, but I added 1/2 cup of shredded coconut and 1/2 cup of chopped walnuts, and I am sure you could come up with other additions. I topped some with raspberries and walnuts while in others, I dug a little hole in the top and filled with blueberry jam. They are a really good idea with only a minimum of sugar and lots of healthy goodness. Once the family have finished eating what they can get into their tummy's today, I will freeze the rest. Rustic Chicken and Veggie Tart – Low Fodmap and Gluten-free
It was dinner time again - yes, it comes around once a day! And what to cook? There were a couple of sheets of puff pastry in the freezer and plenty of veggies as well as leftover chicken. So the Rustic Chicken and Veggie Tart was born. Instead of the pastry, I could have used my bread roll recipe which works brilliantly as a pizza base and so would work for this. I do have to confess that I was feeling lazy so I made the full tarts for Adriano and Dario and I piled the filling into a small pottery dish for me - as you can see in the photo above. However, I have added the link to the bread rolls in the recipe. I know it will work for those who have to be wheat-free. It was very yummy even without any crust and the sweet potato supplied the necessary carbs so the pastry is not strictly necessary. A Walk at the Beach
I have just bought myself a GoPro camera and it is the cutest little thing you ever did see. It is so light and it fits in a small handbag. I've bought it so I can make videos for you when we go back to Italy for a month at the end of July. We're also doing a road trip through Austria, Hungary and Croatia. Last trip away, I took photos but this time it's going to be videos. Anyway, I had to try it out and I thought you might like to see where I walk most days.
