Lemon Curd Cookies – gluten-free recipe and low FODMAP
These biscuits can be eaten as a plain shortbread or jazzed up the way I have made them by cutting out a star in the middle and sandwiching together a plain one and a starred one. It makes them a little special. They do have to be eaten fresh because of the coconut flour in them which starts to absorb moisture from the air and they get a bit too soft overnight. The lemon curd is quite sweet but it is used sparingly in these biscuits so one or two should be fine at a sitting for low FODMAPPERS. Lemon Curd Cookies Print Author: Suzanne Perazzini Ingredients For the biscuits: ½ cup coconut flour ¼ cup tapioca flour ½ cup coconut oil 2 tbsp maple syrup 1 tsp vanilla essence Pinch of salt For the Lemon Curd: 1 cup water ½ cup lemon juice ⅓ cup maple syrup 6 egg yolks 1 tsp gelatin 2 tbsp tapioca flour Method For the biscuits Preheat oven to 350°F/180°C. Place everything in a food processor and mix until it forms a dough. Place the … [Read more...] about Lemon Curd Cookies – gluten-free recipe and low FODMAP
Neenish Tarts -gluten-free recipe and low FODMAP
Thank you for the support for my new cookbook, Low FODMAP Menus for Irritable Bowel Syndrome. I am glad it is finally out there for you all to buy and use. Today, I am going to continue on the vein of the oldies, but goodies classics. Neenish tarts are the same as the chocolate caramel bars I made last week - a staple item in most cafes and lunch bars here in New Zealand. They are smaller than the caramel bars so a good choice when you want a wee hit of sweetness with your cup of tea. The real neenish tarts are a bit different from mine but I am allowing myself a bit of creative license here to make a gluten-free, low FODMAP version. My freelancing is going well with lots of photography for other bloggers, lots of converting ebooks to Kindle and Createspace print versions and lots of behind the scenes blog work for bloggers. Life is good. I had a big birthday this week and went out with extended family to the best degustation restaurant in Auckland, Meredith's Restaurant. We … [Read more...] about Neenish Tarts -gluten-free recipe and low FODMAP

Chocolate Caramel Bars – gluten-free recipe and low FODMAP
Chocolate caramel bars are a classic here in New Zealand bakeries. Every self-respecting cafe or lunch bar has caramel bars. I am not sure if that is true of other countries or not but I am sure you will agree this is a recipe worthy of kings. It combines my favourite flavours of chocolate and caramel. Those on a low FODMAP diet have to be a little careful of chocolate so one small bar will be enough. The Monash University research centre for FODMAPs has declared cocoa as being moderately high in FODMAPs but we can still have a little. Just don't load up on other FODMAPs at the same sitting. That is, of course, true of any sweet treat, but as long as you avoid processed store-bought treats, which could have high fructose corn syrup as a sweetener, then you should be okay with a small helping. 1.0 from 1 reviews Chocolate Caramel Bars Print Author: Suzanne Perazzini Ingredients For the base 500g /17.5oz dark chocolate 6 eggs (separated) 250g/9oz coconut oil 1 tsp … [Read more...] about Chocolate Caramel Bars – gluten-free recipe and low FODMAP
Zingy Lemon Bars – a gluten-free recipe and low FODMAP
Everyone loves lemon, in savoury dishes as well as sweet. I certainly do. I wish I had a lemon tree but I don't. Not that that prevents me from adding lemon to everything. This recipe was inspired by the Triple Citrus Dessert Bars created by Kristine at Real Food Girl Unmodified. She is a chef who believes passionately in real food with nothing adulterated - in other words, a girl after my own heart. Mine is the gluten-free version of the topping of her recipe with my own base. I have a big birthday coming up in a week and I have nothing planned - nothing at all. When my sister had her last big one, she and I went to Paris to be there for her birthday and we had a lovely time. This year, Adriano and I are going on a cruise in the Baltic sea in August after he races (mountain biking) in the International Masters in Norway. I can call that my celebration, can't I? Even though it is five months later. My head is not in the birthday space right now - maybe if I was turning 30 it would … [Read more...] about Zingy Lemon Bars – a gluten-free recipe and low FODMAP
