Citrus fruits can be eaten by those of us who have fructose intolerance or are on a low FODMAP diet. So I have gathered together from friends a collection of recipes which contain them. We all know that they contain a heap of vitamin C and to eat them when you feel a cold coming on but you probably have no idea that they are low in fructose unlike apples, cherries, mangoes, pears and watermelon, which are dynamite for me. In these guest recipes, there are a few things it would be better to leave out to keep them low FODMAP friendly. I will mention these after each recipe. Orange Chicken from An Organic Wife - Use maple syrup instead of honey and tapioca flour instead of wheat flour. Lemon & Herb Spatchcocked Chicken from Honey Ghee and Me - Leave out the shallots. Orange Balsamic Chicken with Roasted Root Veggies from A Happy Health Nut - Leave out the garlic and use a little garlic-infused oil. Creamy lemon Chicken from Divine Health from the Inside Out - Leave out … [Read more...] about Citrus Recipe Round Up – low FODMAP diet friendly
5 easy steps to taking amazing food photographs
Food photography is not that hard. But first a disclaimer right up front - I am not an expert photographer who knows all the little buttons and settings on their camera. I have an old camera, a Nikon D3000, and I know as much as is necessary to take reasonable photos. If you think you will one day read the whole camera manual and learn it all so that you can take fantastic photos, you are fooling yourself. It will never happen. It is too overwhelming. I do actually understand the science behind what I am doing but you really don’t have to know why it works – just take my word for it. Only use the camera manual to find the following things if you don’t know where they are. Then put it down. Get these few settings right and the technical side will be taken care of. Then it’s up to you to make good food, present it well and set the stage. The following steps are how I take photos. Do these things in this order. 1. Get your camera off auto!! Now! All cameras are different so I … [Read more...] about 5 easy steps to taking amazing food photographs
Three Mistakes You’re Probably Still Making on the low FODMAP Diet for IBS
1. Are you eating too much at one sitting? Eating well on a low FODMAP diet means controlling the amount of FODMAPs we put into our bodies in between toilet sessions. We can’t not eat FODMAPs or we would die of malnutrition because they are in all fruits and vegetables. It’s about balance. If we space them out, they will have less effect on us. For example, if we eat a large piece of cake, even though we have used table sugar to make it (and the glucose equals the fructose), the body simply can’t process that amount at once. So eat a small piece now and have another small piece later in the day. This applies to all meals. Eat small amounts more often but always be aware of the accumulation of those FODMAPs. A big portion of stir-fried vegetables, even with only low FODMAP ones, could cause some issues so go easy and be judicious at all times. 2. Are you eating processed foods? Processed food is our enemy!! We must never touch them again! Look at the ingredients on a packet and if … [Read more...] about Three Mistakes You’re Probably Still Making on the low FODMAP Diet for IBS
Chilli Eggplant Muffins – gluten-free & Low FODMAP
I’m being a good girl and baking savory again. I do love my sweet baking but don’t really miss it as long as I have something to munch on for a snack in between meals. I got the idea for the muffins from this great blog I just discovered and do you think I can find it again! It had fabulous photos and was just the sort of blog I love – clean and based in Italy. Anyway, my apologies to the lady blogger who inspired this recipe for not naming her but hopefully my brain will eventually kick back into action and I will be able to retrace my steps and find the blog. These gluten-free muffins worked brilliantly and are really versatile because you can use any old vegetables you want. I used quite different ones to the original recipe and also added the parmesan cheese. These are totally low FODMAP but choose your vegetables wisely from the low FODMAP list. I am sure I have told you about this book, “Food Intolerance Management Plan” by Dr Sue Shepherd. It includes the list of allowed and … [Read more...] about Chilli Eggplant Muffins – gluten-free & Low FODMAP
Dinner Party Menu – gluten-free and low FODMAP
I have been having quite a few dinner parties lately and that has got me to thinking about putting some dinner menus together for those of you who have to watch what you eat. When you invite people to your own home for a meal, it may seem a little odd to cook from the restricted range of foods on your own eating regime. But why not? You don't want to sabotage yourself and who would even know any different, as long as you are a little smart with your choices. Many of your friends will already know about your food intolerances but I don't think it is necessary to make the dinner party in any way about that. Cook delicious food and no one will be any the wiser. You can even serve bread - I would recommend this gluten-free low FODMAP one which was a great success. How you present the food is what can take it from ordinary everyday food into the realm of something worthy of a dinner party. I have put together a menu which I am sure would be a big hit with your guests whether they and/or you … [Read more...] about Dinner Party Menu – gluten-free and low FODMAP
Strawberry Potato Cake – gluten-free and low FODMAP
This weekend I only baked one item - this glorious Strawberry Potato Cake. And to think that it is gluten-free and low FODMAP. Though, as always, the low FODMAPPERS out there, please only have a small piece at a time. You don't want to accumulate too much fructose. Last night I went to a delightful cocktail party with all sorts of small delicacies and I kept asking the waitresses what was in each item - to no avail. They didn't have a clue. So I ate judiciously, using my eyes as a guide and I did surprisingly well. No real problems. I still have to look through all the photos I took to see if there are any worth showing you. I hope so because those kinds of foods are my favourite kind. in fact, I dined on them and had no dinner when I went home. At a certain point in the evening, I had a lady bound up to me energetically and introduce herself. She started chatting away to me like I was supposed to know her and, through the conversation, she told me that her grandson was on a low … [Read more...] about Strawberry Potato Cake – gluten-free and low FODMAP
