I am thrilled that Heather has just posted my recipe on her blog, Mommypotamus. This is a recipe which I make for Adriano and Dario. I can't eat it on a low FODMAP diet because of the honey and all the dried fruit in it. It would be too high in fructose for me, but for any other "Normal" person, this is a super healthy, refined sugar and wheat-free granola bar. Please pop over to her blog for the recipe. Heather is a great lady and mother and you will love her posts on healthy eating and living. Thanks so much, Heather. … [Read more...] about Apricot, Banana & Walnut Bars – Guest Post
Feta & Sundried Tomato Tarts – gluten-free and low FODMAP
I am finally back here with a recipe after a wee break. A lot has been happening in my world as some of you know. I have left my job and started a new blog, Changing, and am now trying to carve out a different way of earning a living. So far, jobs have been falling into my lap. They don't pay as well as my job, but I get up every morning excited, a heavy weight that has sat on my shoulders for 7 years completely gone. 2014 will be better than 2013. I am working my way through my health issues and am already down to only one main pain medication. I am still spending an awful lot of time in front of a computer but I am breaking it up with other activities. I walk every day, sometimes go for a swim at the beach and always walk to do the grocery shopping. But I am sure busy with the two blogs and the work I am doing. It just feels different though. I can work as late as I like and get up when I want. If my son needs me to do something for him, I can. Way different from before with the … [Read more...] about Feta & Sundried Tomato Tarts – gluten-free and low FODMAP
5 changes I have made to get a more balanced life this year
We have all overindulged through the Christmas holidays and now have great hopes for a healthy 2014. I certainly have been putting things in place to make my life better this year. I have even started a new blog documenting this process. It's very bare at the moment but this is is it if you want to have a look: https://www.the-changing.com/ These are not New Year resolutions as such because I feel they set us up for failure. These below are the small and some big things I have put into place to change my life. 1. The first and the biggest change is that I have left my job. While on holiday, I really realised the damage the stress was doing to my health. In the short 8 months that I was in that particular job, my occasional tension headaches morphed into almost daily migraines, I developed RSI in my right shoulder and arm, and my neck almost stopped working. In other words, I was a wreck. I have documented all this on my new blog - Changing. 2. The second change is to vary my … [Read more...] about 5 changes I have made to get a more balanced life this year
Christmas Day – not all gluten-free and low FODMAP!
Christmas is all over once again and we are left with the memories and photos. The family came together at my niece, Kirtsy's home and we had a very happy Christmas lunch together. She put together a very pretty table for us. It was bright and summery despite the rain that had chosen this day to arrive after weeks of sunshine. But it didn't dampen our spirits and the sun arrived a little later on to finish the day in style. Even though we have summer at Christmas time in New Zealand, we still have all the traditional hot foods and traditions that our fore-bearers brought here from England - turkey and stuffing, ham on the bone, steamed plum puddings and a Christmas fruit cake. My mother always makes the plum puddings and this year she made three - just in case we were hungry - and one had a surprise glace orange inside. The Christmas tree is a must, of course, and Kirsty and her two beautiful wee daughters had decorated it with delightful decorations and few sweet ones made by the … [Read more...] about Christmas Day – not all gluten-free and low FODMAP!
What sugars can we use on the low FODMAP diet to help IBS?
You would think that if you had fructose malabsorption that you should forsake sugar forever. Now that actually is a good idea and your health would be all the better for it. There is all sorts of information coming out now about the dangers of sugar - here, here and here. However, many of us are going to crave a little sweetness every now and then and, since fruit has to be restricted, we will turn to our own baking. But not all sugars are equal. For many, honey is healthy and the only sweetener they will use. I used to think that too and used it in all my baking. Big mistake - honey is high in fructose. But let’s start at the beginning and analyze the main sugars from the point of view of those on a low FODMAP diet. Sugars you can use – though always in moderation. Sucrose – common table sugar A crystalline disaccharide of fructose and glucose, C12H22O11, found in many plants but extracted as ordinary sugar mainly from sugar cane and sugar beets, widely used as a sweetener. … [Read more...] about What sugars can we use on the low FODMAP diet to help IBS?
Thumbprint Cookies – gluten-free and low FODMAP
I have been seeing these thumbprint cookies all over the web but no gluten-free ones so here is my gluten-free, low FODMAP version. I took inspiration from those I found on Julia's Album so if you want a mainstream recipe for them, go take a look here. If you are on a low FODMAP diet, be careful about what jam you use. Make sure it is sugar-free and has no apple in it. Many commercial jams have a base of apple so, as always, make sure you check that dastardly ingredient list. I am about to start my second week of freedom from work and I am in heaven. I am still spending too much time at a computer but my headaches have reduced though not disappeared. I guess it takes a bit to retrain the body. I am walking down to the beach each day to watch the frolicking in the water and am getting my courage up to join them one of these days. But, even though the sun is shining, that water is so cold!
