I've gone back to the basics and thought it was time to explain what Fodmaps are. The word Fodmap is an acronym for fermentable, oligosaccharides, disaccharides, monosaccharides and polyols. I've made a video explaining what they are and I have added a few statistics too. Video Transcript Welcome to this video. Today I want to explain what FODMAPs are and give you a few stats at the end of the video. FODMAPs is the letters of the word. F is fermentable for what goes on in the gut when the carbohydrates are broken down. The O is for oligosaccharides, which includes the galacto-oligosaccharides, which are the pulses and the legumes. The other oligosaccharides - the fructans - can be in wheat, barley and rye, onion and garlic, and so on. We're up to the D in FODMAPs, that's the disaccharides. This is the ragu meat sauce that Adriano makes for me when he cooks pasta. It's one of his Italian family meals. And he is such a great husband that he has converted it to a low Fodmap version. So this is an Italian low Fodmap recipe. I had family for dinner last night and cooked a completely low Fodmap meal. I know that scares those of you on a low Fodmap diet and you have no idea where to start and think you have to cook "normal" food when people come over to eat. That is so not true and I will walk you through what I served and how it is low Fodmap. Obviously my family know I am on a low Fodmap diet but if you had guests over who knew nothing about your health issues, they would never guess from this meal. Tomato & Pesto Polenta Bites We started out with these tomato and pesto polenta bites while we all sat up at the kitchen bench and drank our first glass of wine. Just make sure you fill your glass with ice cubes first - that way you can have a second glass later.
