Winter has well and truly set in and I am surrounded by sick people at work. I am breathing the same air that they cough and sneeze into a thousand times a day. The chances of me escaping this winter illness-free are decreasing by the day. I haven't been sick since I got the swine flu in Peru three or four years ago and don't want to break my rather impressive record for staying bug-free. I could suggest they all wear face masks or I could wear a gas mask myself. It might start a trend - a healthy trend. Some suggest munching on Vitamin C, others say drink heaps of water and still others say squirt your throat with antiseptic spray. My method for staying healthy is to eat well, sleep enough and drink a little - yep, alcohol kills bugs. I am not saying this always works but it helps. Salmon & Avocado on Tapioca Bread Rolls – gluten and grain-free
Adriano had to eat early and go out so he cooked for himself and I allowed myself to indulge a little in my favourite things - smoked salmon, avocado and capers. Avocado is on the list of high FODMAP foods, being a polyol (the P in FODMAPs) so this was a test. And I passed with flying colours. No reaction at all. I have been too scared to test any other foods since the garlic debacle but today I took my courage in both hands and fortunately it went well. To finish off the dish I made some tapioca bread rolls I have made before as the base. This is not a low Fodmap recipe. Potato Fish Cakes – gluten-free and fructmal friendly
Here we are with my second fructmal dinner. I have discovered that people with fructose intolerance like to point out that the term actually is fructose malabsorption because fructose intolerance is something you have from birth and is extremely serious whereas fructose malabsorption is something that can develop at any time. The term is shortened to fructmal which is easier to say. 'Fructmal' and 'malaborption' both get red wriggly lines under them when I type them so I guess they are not in the dictionary yet. That's how new this is. Anyway, from now on, I will refer to it as fructmal. Adriano was yet again away for a race so it was just Dario and me. Three things that are well tolerated are fish, potatoes and spinach but I can't keep bunging them on the plate as is, so I experimented with large fish cakes which incorporated them all. Salmon Pizza – grain and nut-free
I was determined to make a pizza base which had the crispiness of the thin Italian bases I used to eat in Italy. They are the only bases I like. None of the fat, fluffy ones for me. I thought this tapioca recipe should work because it holds together brilliantly so I gave it a shot last week. This dough is similar to the bread rolls I made for the burgers we ate recently but with a few differences. Tapioca clumps up when heated with liquid and becomes like a gel. It is this gel which holds everything together to form a dough. I made it, rolled it out very proudly, covered it with my chosen toppings and popped it into a hot oven and waited. And waited and waited. In the end we had to eat – I am talking about after 8.30pm – so I took it out and served it. The edges were beautifully crisp but they rest was a doughy, uncooked mess. Smoked Salmon and Caper Tart – grain-free
Tarts always take longer to make than you think they will. First there's the pastry to prepare and bake and then the filling to prepare and bake. It adds up to ages. And so my family ate late amidst moans and groans about starvation. But the wait was worth it. The pastry is the one I have used for my sweet tarts but I left out the honey. As a shell, it holds together beautifully, even better than ones made with wheat flour and butter. Then I used a delicious filling which I found in a magazine with a few changes. It has a ton of vegetables and salmon for the daily hit of Omega-3. A complete meal in a tart. The pie crust has been adapted from the one Carol uses in her book, Indulge, which you can purchase on her blog, Ditch The Wheat. This is NOT a low Fodmap recipe. Salmon Eggs Benedict
I enjoy my job but I am stuck in an office all day and can’t see the sky. Straight out the window at the far end of the office, I see shops on the other side of a very busy road. At my last job, in order to get some exercise, I used to walk every day for an hour around the boats in the nearby marina, breathing in the fresh sea air. That job was stressful beyond words and I used to take that walk in rain, sun or snow (actually it doesn’t snow here but that sounded good) to get away from the place. Then I injured my knee and was told that walking was now my enemy (doctor’s words) but to use an exercycle five days a week for 30 minutes, which I did at home after work. The exercycle is inside, in a dark room where I need to turn on the light. So during the day, I used to go and sit by the marina for an hour to get my vitamin D and stare at the boats and dream of sailing off to far lands.
