Tarts always take longer to make than you think they will. First there's the pastry to prepare and bake and then the filling to prepare and bake. It adds up to ages. And so my family ate late amidst moans and groans about starvation. But the wait was worth it. The pastry is the one I have used for my sweet tarts but I left out the honey. As a shell, it holds together beautifully, even better than ones made with wheat flour and butter. Then I used a delicious filling which I found in a magazine with a few changes. It has a ton of vegetables and salmon for the daily hit of Omega-3. A complete meal in a tart. Low Fodmap & Gluten-free Bread Rolls
Here is my fabulous grain-free and dairy-free bread. This is the second time I have made it and it was just as good this time. I even used it as burger buns. When you are making it, it is all rather foreign feeling because the flours behave quite differently from wheat flour but persist because it will work out. The dough holds together brilliantly but looks more transparent than ordinary dough. It is more gel-like. The rolls take quite a while to cook but brown up nicely. They do taste different but I really like the texture and so do Adriano and Dario. Give them a try. The rest of the burgers were made up of beef mince, water cress, homemade mayonnaise and roasted tomatoes. Roasted Eggplant Stacks and Pan de Yuca – Grain-free
The changing of web hosts has happened, not without hiccups but it should all be smooth from now on. The great thing is the increased speed of my blog, in particular behind the scenes. I used to be able to go get a drink of water in between screens changing. And it kept going off line all the time. I spoke in a live chat with my previous host and they said they couldn't do anything about it. My new host costs about 5 times as much but it will be well worth it in the end if I can work faster. Time is precious. In the photo you can see a great food stack we had for dinner. Layers of eggplant, tomato, beef burger, poached egg and a sprinkling of parsley and sundried tomatoes. But anyone can make that or a version of it. What I am going to tell you about is that lonely little bread roll over on the side. Banana Mousse Cake – grain, nut, dairy and refined sugar-free
The banana coconut loaf I made on Saturday is almost finished - it was that popular. So I have had to bake again to make sure we have enough for the week. Today, Monday, is a holiday here in Auckland, New Zealand and for me the perfect activities when I have some spare time are baking and photographing. I have made the same base vanilla cake you can find here, which comes from Carol Lovett's e-book Indulge and then I devised a wonderful banana mousse for the topping and used a few leftovers for the filling between the layers. The banana mousse is made from only 4 ingredients and can be used by itself as a dessert. For the filling, I whizzed together in my trusty mini food processor the lemon curd left over from my lemon meringue tarts, and the leftover coconut topping and strawberry puree from the banana coconut loaf and it made an interesting tart pink mixture which contrasts beautifully with the sweetness of the bananas. Banana Coconut Raisin Loaf – grain, nut, dairy and refined sugar-free
It was about time I tackled a grain and refined sugar-free loaf and my favourite has always been banana so a banana loaf it was. This was an experiment, using all the knowledge I have so far gained about these new products and how they work as opposed to ordinary flour, butter and sugar. I adjusted as I went and the recipe below is the result. This loaf has worked really well and tastes great. I made a coconut cream topping to go with it in case it was dry but it wasn't bad at all. Oh, and I have used coconut sugar for the first time instead of honey or date puree. It gives a great, almost caramel flavour. Coconut sugar is a natural product made from the nectar of the coconut palm tree and doesn't put stress on your blood sugar levels the same way that white sugar does and retains all its minerals and vitamins. It also has an extremely low glycemic index of 35. Chicken Cupcakes with Sweet Potato Topping – Grain and Nut-free
I work in a real estate office in an upmarket suburb of Auckland. We have a corner shop with a window on the main street and other windows along a walkway back to the Village Green and parking. Back there is also a retirement village. We work to a background sound of clompity clompity clompity or clonk, shuffle, clonk, shuffle as a constant flow of elderly inch along the walkway with a variety of walkers and walking sticks. In the beginning, it worried me to be constantly reminded of where I was heading but now I see it differently. I see it as a signal to take control of my health right now. With my sedentary job and sedentary blogging in the evenings, I am a candidate for a bad old age. I was born and raised until my teens on a farm where movement was natural and gyms unheard of.
