I enjoy many different cuisines and Mexican is among my favourites. If you eat low Fodmap, you do have to watch out for some of their ingredients like legumes and too much dairy but it is still possible to get the richness of the Mexican food while staying true to the low Fodmap diet. It's not hard to find gluten-free tortillas which are suitable for us these days, and cottage cheese and mature cheese are on the permitted lists as long as we don't overindulge. This is an easy, delicious dish which wouldn't go amiss even for guests and it seriously took me about ten minutes to put together. Oh, and it's vegetarian. Greek Quesadillas – with a touch of Italian
Italians are allowed to eat Greek, especially if they live in New Zealand and a few sundried tomatoes and mozarella are involved. Anyway, I didn't hear any complaints. You could substitute all sorts of things for the ingredients and create completely different quesadillas. These could be vegetarian but I added chicken to make sure my family got enough protein. This is not a low Fodmap recipe.
